Nice. What do you do to prepare it for the plate. I’m only asking because I’ve kept one 20 years ago. Basically keeping a couple for crabbing but letting them mostly go 🍺🍺
Hi Downunderfulla, i like to bleed by cutting deep behind the pectoral/side fine on both sides. Found it bleeds much better than necking the fish. Cut the fillets off later and skin it. Cut the dark bloody meat out fown the middle. You will see the color difference. I cook it up like steak pan fry, well done, or medium rare and serve with some salad. Steak of the ocean!

Thanks mate, yea some solid fish available off the rocks here. Like most land based ledges can be bit hit and miss sometimes
