- To make Calamondin marmalade:
Wash your fruit.
Cut in half, ensuring to collect all juice.
Remove pips and set aside (for planting or for the bin - not needed in the recipe).
Chop or slice the skin to your preferred thickness. Scissors make it much easier. I did mine very thin, and it softened quickly.
Place all the peel, pulp and juice in a saucepan with equal weight of granulated sugar.
Heat gently until sugar dissolves.
Increase heat to a rolling boil and stir frequently to avoid sticking and burning.
When it has thickened and changed from a watery orange to a translucent amber, test for setting point by spooning a little onto a plate. When it cools, push the blob of marmalade along the plate surface with your finger. If it wrinkles then it's ready to bottle up into sterilised jars. If not, give it longer bubbling away and check frequently until it's ready.
