we do it like that in the Philippines... traditional with jungle coconut wine on the other hand lol . 3 1/5 hours depending on the size . The perfect Lechon is when the skin is crispy red AND with minimal popped skin .

We have same way of cooking here in the Philippines.. It's called Lechon.. The difference is we put onion leeks, Laurel leaves, lemon grass(tanglad) in local language.. And put a lot of salt.. It's so delicious.. We cook lechon during fiestas, birthday, weddings, etc.. Good job man.. Greetings from Philippines..

This is without a doubt the best video I have seen from you boys yet! Right from the beginning and the way you started the fire to watching the way you got little miss piggy all ready on the branch. I love that you simply used salt to enhance the flavour…nothing else was needed. Watching it slowly turn all golden and crispy while the juices ran over it and dripped into the pan was torture. Watching Boki enjoy it at the end…especially the ear…that was best part! This was absolute perfection! Once again I thank you for doing what you do and I send you love as always :* :*

I thinks I'll try this method on beavers that breaks my pond and causes its to over flows. I'm Romanian on my father's side and we do this every year for Christmas on Jan 6. 5 families cooking one for each of their families it really is torture watching this video can't hardly wait until Christmas this year looking forward to eating some roast pork. The crackly skin and the string meat in the belly is the best part.

We often doing this on day before christmas or rather to sey eye to christmas, we call badnjak day
We go on to woods and get the oak trees that didnt grow and get them front of our houses, now we roast either lamb or pig depends what u keep and what you like
On evening we gather badnjak on huge pile and we burn them front on church

Roasting is very common here in the Philippines and was even done by our ancestors before the Chinese merchants traded in the country, the Chinese and other nations traded here hundreds of years before the Spaniards. Only when the Spaniards came and saw the dish they named it lechon and now they claim the dish originated from them but in reality only the name.
We usually roast cow, fowls, tuna, and others. As long as you can stick it you can roast it. In every province they have their own version of this dish just like the adobo and sisig.

In my homeland the Philippines, we call this lechon baboy or roasted pig. We put some lemon grass, garlic, onions and other spices. Inside the belly of a pig before we roast.
