Remove Shrimp intestines
Cut slits on shrimp
Squeeze shrimp lightly
Remove tail spikes from shrimp tail
Remove tail scales to remove moisture
BATTER
2 cups cornstarch
1 cup of cake flour/All purpose
2 egg yolks
1 cup of cold water
Deep fry cold water
Drizzle batter over cooking tempura
Luya
Mirin
Labanos
Soy sauce
White sugar
Open secret ng mga tempura cook: use cooking oil that can withstand high heat temperature like *sunflower* *oil* or *sesame* *oil* para halos walang kumakapit na oil sa tempura, dahil dapat napakainit yung oil. Madaming "japanese restaurants" kuno dito sa pinas na soggy yung tempura at napaka oily.
Masarap din mag tempura ng karneng manok!!!
Nipisan lang ang Hiwa at budburan ng salt and pepper !!!
