I did wait a long time for the cooked mixture to cool down before putting it in the refrigerator. What suggestions do you have so my final product is a homogeneous colour? Thanks ;-)
I also found mine to be the same.. Seems that my gelatine wasn't melted away enough, but the top where there was no gelatine still formed a good texture.. So I'm planning to boil for longer hopefully to let it melt more or sift the gelatine in the end before putting into the refridgerator.
Answer for anyone in the future that also has this problem: It could be possible that you heated it too long. Over boiling coconut milk or cream tends to make it split. It could also be from letting it cool for too long before letting it set; the same reason why it also has a split in the can. This can be helped by mixing it occasionally as it cools.

I grew up eating fresh coconut and know the canned milk tastes nothing like the real thing! The only coconuts I can get locally are what are sold in the chain grocery stores, so they aren’t on the green side. I want to try making this because if I substitute a diet sweetener for the sugar it will be a low carb dessert and they are hard to find! Coconut is my favorite.
@Mesh Grow Bags I just found that there is both coconut milk and coconut cream. The coconut cream separates from the coconut milk when the coconut slurry is allowed to sit. I think what you are making is a combination of both the cream and milk which is what I’m used to. So delicious! I can’t wait to try making it.
Your water, milk and coconut measurements are a lot more to solidify 26 grs of gelatin. I think your gelatin powder should be more than 26 grs. I tried 2 times, the gelatin didn’t solidify even chilled for 24 hrs.

I use palm sugar. Refined sugar is not healthy. It tastes better without milk. And l add pandan leaf to make it smell good. I use agar-agar instead of gelatin

Coconut milk will separate if the heat you cooked in is too high. The white creamier part of the coconut cream will rise to the top once it cools down, leaving the less creamy part to be on the bottle, which is clear-ish.
