The manual that comes with it says use speed 2 (just made my 1st batch) she uses 4 here. Her ice cream came out way better than mine. 30 minutes at speed 2 and it was still pretty runny. I should have come and looked up this video, but I chucked it in the freezer and am hoping for the best lol. If you see this, did you add more ice or salt during the 30 minutes?
Running it faster whips more air into the cream, giving a softer and fluffier texture. Running it slower gives more of a gelato texture. The Bosch can do both!
Does the ice and salt scratch the bowl?
It should not
Will this work with the stainless bowl that comes with the universal plus mixer?

The cookbook that is included does not have low sugar or sugar free options but any good recipe on the internet could be made with this unit.
Will coarse sea salt work for the ice? I bought some I have to crush because the pieces are large
Can I use this for making liquid nitrogen ice-cream??
I’ve followed all of these instructions and my ice cream base remains liquid. It won’t freeze. What is wrong???
Do you find that the ice or the salt scratches the plastic bowl? Also, how sturdy is the paddle, I’m concerned about it breaking if the ice cream gets too firm.
Since the Bosch bowl is a non-porous poly carbonate, we have found that the ice and salt have not affected the surface of it, as far as we can tell. We have had them out a full year now and no one has reported a broken paddle yet , so I should say that they are standing up well. We usually don't let the ice cream get rock hard as I like to make it to the soft ice cream stage and then freeze it in a container, although it is scoopable right out of the ice cream maker.

The "paddle" is called a dasher. Just sayin'.
Why is everything made out of plastic? So sick of expensive items using damn plastic. One reason I won’t buy this crap!
