Nothing wrong with being safe. I only do what the FDA says is safe. If there is a catastrophe you will not be able to run to the emergency room. So, don't think you are smarter than them it's not worth it.
Good stuff but all jars need sanitized before canning.
If processed for more than 10 minutes, you don't need to from all the sources I see. Salsa is water bathed for 40 minutes.
