Made this today ,Im really not that great at baking ,dont have scales to measure out ingredients ,which is on my list to get !! Hi SquiffySinger. That's a shame. Tinned coconut milk is very variable in quality. Usually the milk forms a solid block in the tin, with some separate liquid. I always discard the liquid and then stir the block into a liquid before using.

Your egg yolks have a nice rich orange color, unlike the pale yellow color of many eggs. Orange yolks are the result of chickens eating more food with high carotene content. Thanks for the video.
Hi, You can use oil instead of butter, but since butter contains water you actually need to use less oil. the ratio should be about .75%, so instead of 170g butter I would try 125g oil.
Superb! I like the addition of the coconut milk. There is a sweetened version of the desiccated coconut, is that something you would consider. Also, I would have like to add finely chopped glaze cherries into th mixture. If I had done that would it have affected the quantities of the other ingredients. it would be for visual effects rather than making a cherry cake - which I understand is a recipe on its own. Hi Carefree Delight. Thanks very much. In the UK desiccated coconut is not sweetened. But that is fine since I don't think this cake needs it. However it is easy to make a sweetened desiccated coconut by slightly moistening the coconut and tossing it in a little icing sugar and then letting it dry out. Adding glace cherries won't affect how the cake bakes, and it would add a flavour variation and just a little different texture when you bite into a cherry .

Its started off like sourdough and finally baked after 10 days of fermenting and adding ingredients. Take a look Geoff and see what you think, assuming that you dont already know about it. Regards .

HI Amanda, I intended to use tinned coconut, with 15 grams of fat per 100g, rather than the thinner version. But in the end I used a sachet of Thai coconut milk, as it was 200ml, so just about what I needed including that used for the topping. It had 17grams of fat per 100 grams. I am sure tinned would be just as good, but you need to mix it to combine the liquid with the solids before using. I hope yours turns out to be as tasty as mine.

Hi Geoff. I just made this today, but made a few changes based on what I had in the cupboard and the fact that I am too lazy to do the creaming of the butter/sugar. I just put all the ingredients in a mixing bowl, replacing the butter with green Flora and using SR flour. I mixed it with an electric hand mixer for 30 seconds and poured it into the cake tin. It turned out lovely and moist with a nice coconut flavour. We had some hot with custard... superb. Thanks for the great recipe. Miles.

I always use 'free range' eggs, where the birds are not reared and kept in a barn for their whole lives.

That's fine, you could substitute some Erythritol/Stevia and see how that works.
Another corker Geoff. I like the sound of the raspberry jam. I assume just a thin layer, just enough to stick the coconut?
Hi Miles. Yes, if you warm the jam you will be able to brush just a thin layer over the top and then put the coconut on top and it will stick.
