It's not necessarily just creating the sounds, but the foresight to code all of the interactions beforehand. They actually did all this stuff way before. ik that Zyra, who was released back in like 2012 has this.
Its so nice for someone to actually mention this. Another example for custom hitsounds would be Tahm Kench, who also has varying hitsound depending on what he hits, because its his tongue.
Tongue is the probably the softest "weapon" in the game and soft fleshy stuff usually make little to no sound and it shouldn't change much depending on the material it hits. Although, It would be fun if they made it so that Anivia slowed or stopped his tongue attacks
To be fair some features like knockup animation are things that aren't mandatory on every champ, so it depends if the ppl who are working on them wants to do some extra work for that, so thats why only some champs have such small details

have you considered making a video about how only a couple champions have multiple voicelines for a triggered animation(aka poppy's /joke chaining together or tristana having multiple marching songs on her /dance)?
Couldn't you doing something along the lines of if character "A" has sword character "B" responds with the appropriate sound. So malphite when hit by any champ wielding metal it will make the metal hitting rock sound. Many sounds wouldn't be as unique but it could be a appropriate fix i think.
I can't really blame Riot in this particular case, though. Its not really about players not caring about it, rather not noticing it. I played Aatrox for a very long time and these details are so subtle, I never noticed them. Not to mention the AA sound isn't even that loud while playing, there are many other things like the music or champion/announcer voice lines in the background too. Its very hard to hear the difference. The Aatrox ones are especially hard to differentiate, meaning the effort put into this stuff was probably quite minimal. The game's quality didn't suffer at all by this trend not being continued is what I wanted to say :D
This is one of the things you should care least about in League... it's not a game where your immersion matters in the first place and this isn't something that affects your gameplay. 90% of the time you don't even comprehend these sound when you're playing the game if you're focused. If anything I'd rather have them fix the bugs and balance the game properly instead of making sure hits sound different on each and every single thing...
I noticed they have been giving a lot of taunt/joke/etc just one line each and that's super disappointing considering even extremely old champs have 2 or more each. The single laugh line especially makes it very hard to enjoy

Sure, Riot's corporative side is horrendous, greedy, scummy and outright garbage. We all know this. But the creative side is still breathing, trying to bring new stuff to the table with all the limitations the corpos gives to them. Those who met rioters irl have said that they're all talented individuals who always struggles to keep the game alive. I wouldn't dismiss riot entirely as that "they don't care anymore". They do. Inmensly. The greedy clutches of the higher ups are not allowing them to be shown.
I mean with the amount of layoffs that has happened over the years, all the developers and artists who cared about the game are gone and Riot has become more of a cash grab than anything. Now it's the pet project of greedy corporate hands.

People were bored stuck at their homes and it was a great opportunity for Riot, i think. They thought they didn't have to put such efforts into the game because they were gaining players regardless?
its ok to want to spread awareness but it easily can lead to miss information, garen has this interaction since season 5, many champions came after that didn't have this interaction. im sure its not that they ignore it or that they "dont care" anymore but more like they are pushing updates like this to later dates.
I believe the main problem here is not when they started doing it (Garen ASU), but rather how this is not a costant feature with every champion, and especially the latest ones which are extremely underwhelming and lacking in such terms.

Well... volibear is the only champ that has airborne animation. Every other of +160 champs just runs silly or stands still.
