Husband's Favourite Classic Keema Matar Recipe | Mince and Pea Curry

- Keema matar (English: "pea and minced meat"),[1] also rendered Qeema matar, is a dish from the Indian subcontinent associated with the Mughals. The term is derived from Chaghatai Turkic 'قیمه' (minced meat).
Keema, is a staple curry in many Pakistani households. This particular version, Classic Keema Matar (mince with peas) is one of two favourites in my own house, the other being Aloo Keema (mince with potatoes). Both curries can be made following this recipe, simply replace the peas with potatoes.

Ingredients:
500g lamb mince
150g frozen peas
1 medium onion finely diced
2 medium tomatoes finely diced
1/3 cup of oil
1 teaspoon of:
salt
coriander powder, garam masala and kashmeri chilli powder
1/2 teaspoon of:
regular chilli powder and turmeric powder
3 bay leaves and 2 black cardamom pods
1 frozen peice each of ginger and garlic cubes
1/2 tablespoon of dried fenugreek leaves (kasoori methi)
3 green chillies sliced lengthways (optional)
fresh coriander to garnish
water in a jug

This was the first curry I ever ate and 25 yrs later its still my favorite. My mum was rushed to hospital and our neighbor took me in and looked after me for a couple of days. I was really upset, but on the first night we had this with chapatis and although I wasn't used to the spice, it was the tastiest thing I had ever eaten; such a bad and good memory at the same time. I'm not an overly emotional person but this comment genuinely made me tear up - a child being taken in by neighbours - the sharing of resources such as time, shelter, food and love - the whole village to raise a child idea - just perfect. My mum was in hospital for 3 months in 1977 over the summer when I transitioned from primary to secondary. My dad worked long hours, the neighbours tutted that I was running feral, but not one of them fed me anything more substantial than an ice lolly.
I'm assuming you're in the UK Edward, but maybe not, but I feel here we lost much of our community spirit post-war, and our vibrant migrant populations have so much to teach us to rekindle it.
My favorite dish has always been keema mattur, especially the way my mum made it. She passed away a few years ago, and I’ve missed having it because no one could ever make it as perfectly as she did. But I made it myself for the first time last week using this video, and Alhamdulillah, it the closest I’ve had to how my mum made it. Thank you.

Made this tonight and it was absolutely fantastic, highly recomended, and eating it with chapatti is the only way for me. I added a teaspoon of cumin to the spice mix and a piece of casia bark. Also i used good quality italian tinned tomatoes and a sploge of tomato purae.

Another fantastic, authentic recipe. The sweetness of our British peas is great with spices, I do a prawn and pea dish I enjoy. My chapatis/paratha are much improved thanks to you.

Great video says the "old white guy” - that’s me. My first ever experience of Pakistani food was at a work mates house 40yrs ago when I gifted him some exercise equipment, his mum fed me keema matar - I will never forget the amazing taste. She too apologised for speaking Punjabi, which made me feel awkward because I never thought it odd that I spoke English - it’s my language and you should never feel the need for saying sorry for speaking yours. Ever since I have been trying home recipes like yours to bring back that memory.

What ready made curry sauce would you use for a version of this ?
Thank you for your comment. I'm afraid I am unable to recommend any as I've never tried making this any other way other than how I've showed it. If you really wanted to try then I'd say maybe a bhuna or a balti masala base from the Pataks range could work but the taste would be totally different. Let me know if you do go ahead and try it, I'd love to know.
I have 500 grams of mince in my fridge to be used today. I know what I am making now :). Hi Steven, I normally leave them in but you can remove them once you've finished cooking.

How do you get rid of mince meat smell.
I love keema but dont know where am i going wrong?
Lamb in general has a very distinctive smell and keema clearly being lamb mince will also have that smell and flavour. Adding ginger and garlic and garam masala will elimate the strong smell but it's won't fully go away. Try using beef mince as its not so strong flavour and smell wise.

could you please tell me the amounts and how often you add the water during the second stage of cooking the mince?
Hi Kathryn, so water is added when the mince is dry. I cooked off whatever water was initially in there to begin with then added a splash in then bhunned it and just kept repeating this until I had done it for 10mins.
Can Beef & Chicken be used in this recipe instead of Lamb/ Mutton?
Any chance you can put approximate times on each stage for first time cooks like me?

I've never tried it but it does need them to flavour the dish and give it a little heat.

Yes it is as it speeds up cooking but doesn't need to be.
Water needs to be around 167c or above

If I wanted to do a keema and pea rice would I use this recipe but just add in the rice.
Yes but keema rice requires a little more masala than what is in the keema peas. Just bare that in mind.

Do you ever add coconut milk instead of water in keema recipes?
No I don't as my curries are traditionally made with the use of water rather than coconut milk. But you may adapt the recipe to suit your personal taste.
I found you about two weeks ago. I am so glad I did. I love curry but am not so good at being consistent with the flavouring. I made this today...... it is beautiful and I now know what you mean by the 'level of flavours'! Today is Mother’s Day 2023 my first without my mum .. she passed away end of last year suddenly with pulmonary Fibrosis I decided in memory of her to find a kheema recipe thank you your bubbly character really cheered me up and I’m now making it and it’s turned out delicious and I’m having it with Rice but I used Turkey instead just for health reasons just wanted to share that with you 😔🙏🏼💜
