3 lb ground pork
75 spring roll wrappers (be sure they are smooth in texture)
1 small jicama
1 shallot
2 garlic cloves
1/3 bag of woodear mushrooms (1 cup) - soaked & chopped
2 carrots - shredded
1 1/2 tbsp fish sauce
1 1/2 tbsp soy sauce
1 tsp salt
1 tsp pepper
1 1/2 tbsp sugar
1 cup bean thread noodle - soaked & chopped
1 small onion - chopped
3 eggs (1 for rolling, 2 for mixture)
To serve:
Green leaf lettuce
Mint leaves
Vietnamese dipping sauce
* If you are not serving it with a dipping sauce, you'll want to increase the amount of seasoning: fish sauce, soy sauce, sugar, salt
