I have heritage in China and went to buy eel and the eels were still alive in the container. The man running the stool picked one up and SMACKED its head against the side of his table to stun it, he then slit it’s belly and opened it up so we could see it’s insides. It was alive the whole time and even tried to escape while it was inside out, who knows how he could live like that if he did escape, and I was just standing there, mouth wide open. That is what the shark being cut open while still alive reminds me of.
The way the shark was just dropped into the pan, as if the pan was deeper than realism would account for took me off guard. But it also just fit as seeing the shark fin stick up out of the pan like that was quite a fun detail.
