Excellent series but until you try the Canadian 'Sharp Cheddar" Kraft Dinner, you are doing yourself a disservice. For the more refined mac and cheese consumer, Kraft Dinner Sharp Cheddar has the tart & strong flavour you are looking for. I don't know if America has an equivalent maybe that's why it wasn't featured?

They're dry because you're mixing them over heat. There's no need to serve them steaming-hot.
(Using less milk than recommended won't help, either.)
