  • Crisp, light, and airy, these homemade Ladyfingers are so much better than store-bought cookies! Also known as savoiardi or sponge fingers, these finger-shaped cookies are so easy to make from scratch and are perfect for soaking or dipping. You only need a few simple ingredients to make these sponge-cake cookies. These cookies are a must have for tiramisus but they're delicious on their own too and so fun to make!

    3:37 You say that and I'm thinking of some "new" ingredients we have and that people are wary of of like MSG, Xanthan gum, guar gum. I am pretty sure that when baking powder was introduced people screamed at this unnatural thing that makes your baked goods rise. Like what kind of sorcery is that;I didn't see the volume going in the oven but now it rose?

    Really, if anyone is only making these for tiramisu, please check out the “IL Fornaio Baking Book” by Franco Galli, his recipe for tiramisu uses cake layers (a “Torta Maddalena“) you slice into layers instead of ladyfingers, it’s an egg yolk rich type layer able to soak up the espresso, sweet Marsala and dark rum with ease without getting soggy, yet remaining light, tasty and fresh and since it forms the whole layers, the dessert turns out more even. I think It’s by far not only the very, very best homemade recipe, it’s sincerely the best tiramisu I’ve ever had in my life…

  • @mimosveta
    @mimosveta Рік тому

    also, since the point of this exercise is not to get the bubbles out of egg whites while doing all this, why not add flour to egg yolks, using the mixer, to make sure there are no lumps of flour remaining, and then fold the egg whites into that. yes, this is going to be even thicker component than just egg yolks alone, but it will also mean less "folding", less loss of bubbles, no flour lumps, I mean, I can't think of a single reason to to do whites into yolks, and then flour into that?
    also, since we don't want to loos bubbles, what happens when this batter goes into piping bag and gets squeezed out? would that pop most of the bubbles?
