- This is the second video I've posted, the last one making a basic lamb curry for British Indian Restaurant Cooking, this time a slightly different preparation for a basic chicken curry that can be made, then frozen, thawed when required and then used to knock up any chicken curry on the menu. I have a formula written up to create 18 classic BIR curries by simply adding a few ingredients to make all the classic Indian dishes you'll recognise on most Bengali run Restaurants in the UK, I will discuss this later in subsequent vids.
INGREDIENTS - SERVES 18 SINGLE PORTIONS
oil 6 tbsp
onions 3 large sliced
Salt 1 tbsp
Turmeric 1.5 tbsp
Coriander Powder 2 tbsp
Cumin Powder 1 tbsp
Garam masala 1/2 5bsp
blended tomatoes/pasatta 2.5 litres
boneless chicken 2.5 kg
water - as required

Beautiful! With a couple of nan and a Guinness that would be Heaven.
Oh yes!
havent used base for years now,..the onions, spices and the method/technique is the base gravy.
Good choice 👌
Enjoying these latest videos,, still learning from you
Glad you like them!
"People get hung up about base gravy". Yep, i think that`s what puts a lot of people off, Steve ? It certainly did with me, but hopefully this modified way of doing things will encourage more people to have a crack at it ? Thank you very much for the video :)
Absolutely 👍
Looks lovely. One thing I have starter to do, is curries for a quid. This evening (post pub), I have knocked up a 2 can of chickpeas channa chat masala, 5 people have claimed to be full, given how much you love your veg, have you considered doing a budget series?
Yes about 3 years ago I made 2-3 recipes for £1 curries. I also made 2 videos for Birmingham Council on a YT channel called Healthy Brum, easy to find the videos as they got far more views than the rest of the vids on there. Here's a link to 1 of them from my channel;

@Steven Heap just watched that, amazing that was only 3 years ago! An onion for 10pence, be amazed if you can find that again!
@@GiantHaystack yes that's true, it's depressing to see all the prices now
could you make this with the chicken in then freeze some as a base?
Exactly 👍
Looks a cracking curry that Steve. 😊
Thanks mate 👍
The revoloution has to start somewhere Steven!!!! Could I do a veggie version?
I find it works best with meat and poultry as they don't break apart but you definitely could do veg, just avoid potatoes, as all this curry is going to be cooked again. I don't use this style of cooking for prawns or paneer as I always want to use fresh.
@@StevenHeapRecipes Cheers Steven, thanks for uploading and commenting. I'll definitely give it a go
Much appreciated 🙏
Am I missing something or is there no chilli in this dish?
All chilli and specific spices go into the curry you create from making a basic curry.
