    Here's What You'll Need
    2 avocados
    2 roma tomatoes (diced)
    1/2 red onion (diced)
    3 tablespoons chopped coriander
    1 tablespoon minced garlic
    Juice of 1 lime
    Pinch of salt
    3 large chicken breasts
    250g streaky bacon
    How You Make It
    Preheat your oven to 180°C/350°F.
    To a mixing bowl add your avocado, tomato, onion, coriander, garlic, lime and salt.
    Using a fork, roughly mash the avocado and the other ingredients. (Don’t overdo it! The guacamole should be a little chunky.)
    Set guacamole aside.
    Put one of your chicken breasts on a chopping board and butterfly.
    Open the breast up and spoon in a heaped tablespoon of your guac mix, then fold your breast back over.
    Lay down 5 rashers of bacon (per breast)- make sure there are no gaps. Place the chicken at one end of the rashers and roll him up to create your wrapper.
    Place in a baking dish, loose bits of the rashers facing downwards (this way they won’t unfurl).
    Bake for 30 minutes.
    Serve with rice and extra guac. Delicious
