Karela Pyaz
Serves 4-5
Recipe in English:
Ingredients:
-Karela (Bitter gourd) 1 kg
-Namak (Salt) 1 & ½ tbs
-Cooking oil for frying
-Cooking oil ½ Cup
-Pyaz (Onion) sliced ½ kg
-Lehsan paste (Garlic paste) ½ tbs
-Tamatar (Tomato) cubes 3 medium
-Hari mirch (Green chillies) 5-6
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Namak (Salt) ½ tsp or to taste
-Haldee powder (Turmeric powder) 1 tsp
-Dhania powder (Coriander powder) 2 tsp
-Lal mirch powder (Red chilli powder) 2 tsp or to taste
-Kary (Raw mango) peeled & cubes ½ Cup
-Garam masala powder ½ tbs
-Hara dhania (Fresh coriander)
Directions:
-Peel & deseed bitter gourd then chop into small pieces with the help of the knife.
-On strainer,add bitter gourd,salt and mix well,cover and let it rest for 30 minutes then wash thoroughly 3-4 times and squeeze to remove excess water.
-In frying pan,heat cooking oil and fry bitter gourd until golden brown and crispy & set aside.
-In wok,add cooking oil,onion and fry until light golden.
-Add garlic paste and mix well.
-Add tomatoes,green chilllies and mix well.
-Add cumin seeds,salt,turmeric powder,coriander powder,red chili powder,mix well and cook for 2-3 minutes.
-Add raw mango and mix well.
-Cover and cook on low flame for 5 minutes then cook on high flame for 2-3 minutes.
-Now add fried bitter gourd and mix well.
-Add garam masala powder,cover and cook on low flame for 15-20 minutes.
-Add fresh coriander,mix & serve!

Directions:
-Karelay ko peel ker ka deseed ker lein phir knife ki madad sa small pieces mein cut ker lein.
-Strainer mein karelay aur namak dal ker ache tarhan mix ker lein aur dhak ker 30 minutes kliya rakh dein phir pani sa ache tarhan dho lein aur ache tarhan squeeze ker lein.
-Frying pan mein cooking oil garam karein aur karelay golden brown & crispy hunay tak fry ker lein & side per rakh dein.
-Karhai mein cooking oil aur pyaz dal dein aur light golden hunay tak fry ker lein.
-Lehsan paste dal ker ache tarhan mix ker lein.
-Tamatar aur hari mirch dal ker ache tarhan mix karein.
-Zeera,namak,haldee powder,dhania powder aur lal mirch powder dal ker ache tarhan mix karein aur 2-3 minutes kliya paka lein.
-Kary dal ker ache tarhan mix ker lein.
-Dhak dein aur halki ancch per 5 minutes kliya paka lein phir tez ancch per 2-3 minutes kliya paka lein.
-Ab fried karelay dal ker ache tarhan mix ker lein.
-Garam masala powder dal ker dhak dein aur halki ancch per 15-20 minutes kliya paka lein.
-Hara dhania dal ker mix ker lein & serve karein!

Everyone interested in cooking bitter gourd must try a new way of eliminating bitterness out of it without using salt .... Cut ur karela the way u like and soak it in ice chilled water for 10 min. Drain and pop in freezer. Then add 4 TBS of yogurt at any stage while cooking. Ur karela will be as sweet as onions.

Good tips with the scraping and marinating in salt.. does that take away the bitterness? I'll try this next time for my friends who don't like karela at all.

I am in Taiwan and they cook bitter melon with a duck egg. Completely different method to this but this looks interesting. Food is wonderful!

My All time favourite vegetable
I cook it exactly the same way minus the raw mango and the peel which you scrap from the ketalas ,i also put salt on it and wash and after staining ,i fry them and then when eating sprinkle on the individual plates its really very crispy and tasty
fatima abdul qadeer lemon juice also does wonder to decrease its bitterness, add it while frying ur krelay, for half kg add two to three table spoon lemon juice

To get rid of bitterness ....simple way is to wash it and leave to dry then cut it as u want and just fry it......they taste so good

scraping is not good....that part contains so many minerals....discarding this will definitely reduce bitterness..without scrapng also you can make it tasty ...

I never throw the peels of karela.
Salt lga k rakh dai n wash like karelai. Freeze them n jab use krne hu tu fry untill crisp n add either in chana daal or as in pyaz n tamater masala.
They taste ausum.
