Homemade breakfast sausage links ; original and maple blueberry

  • Come along as my husband makes breakfast sausage links for our family. He uses a LEM meat grinder and link stuffer. He made a plain breakfast sausage and some maple with blueberries.

    You can also use a corn-on-the-cob holder or a needle in a small cork to poke the air pockets. Beats having to buy a single use item. Thanks for the video!!

    Last weekend I took a pork butt and went through the whole cutting, seasoning and grinding portion of making breakfast sausage but when I went to stuff, used sheep casings, the casing would not feed but 2 inches onto the stuffing horn. Either the casings were too small or I didn't have a small enough horn. So into the freezer the ground seasoned pork went. I ordered a different size horn and the 21mm collagen casings. So here's to defrosting the pork and retrying to stuff it. Very good tutorial and your sausage looked fantastic. I to will be doing the blueberry sausage the next time as well. The Bearded Butchers are awesome 🙂

      The blueberry maple sausage turned out delicious, I definitely recommend that.

      I remember the first time I tried to make stack sticks and for some reason I didn’t think about the stuffing horn size. Had to get creative with getting it into the casing.

    Love homemade sausage. The wife and I have been making it for 20+ years. Our niece loves blue berries. We will surprise her with some blue berry sausage. I never thought of lining the tubs with clear plastic.

    Great video, what brand/type of collagen casing did you use?

      We got them from Owen's bbq they are collagen casings specifically for fresh sausage and not snack sticks. We have tried the LEM brand as well and they work great. I would recommend sticking with the "clear" casings instead of the mahogany ones because the clear casings seem to be thinner and have a better bite.

      @@thehavenhomestead Thank you! I am a novice on this. Tried to make link sausage for the first time with the LEM smoked casing and it ended up with a chewy casing. I will try these others.

    Do you ever use any filler such as breadcrumbs or rice?

      No, not for this recipe. On some brat style recipes, I will use rice, flower, or Rusk as a binder. But not always.

    May i suggest that you view some Duncan Henry sausage making videos, just to learn how to "link" much more efficiently. Not telling you that you are doing anything wrong, just suggesting that you learn a little something. It will cut your time linking dramatically. Most people don't Love the linking process. Made a huge difference in my linking.

    One quick little critique/suggestion: You'd be better off making a little test patty and cooking it right before you move onto the stuffing step. How heartbreaking would it be to do all that work only to realize you missed putting something in after you can actually do anything to fix it?

      Do you grow and dry all of your own seasonings? If not, you bought yours too, and under your definition, it is not homemade either

      We like Owen's bbq brand, so we use it. If you have a seasoning recipe you like, that's great. Make what your family likes.

    Great minds think alike because I just made a batch of Breakfast Sausage links for my sister for Christmas. There's nothing better than HOMEMADE SAUSAGE. And we know what is in OUR sausage because we made it........I have the exact same Sausage Making equipment. That was the best investment I made years ago. Your Sausage looked amazing friend. I could tell by the look on your face, it was super delicious. That Maple/Blueberry Sausage sounds tasty. I follow the Bearded Butchers too. They are so knowledgeable about the different cuts of meat and their knife skills are insane. I wish I could carve up a side of beef as expertly as those guys do and, they make it look so easy.
