How to make a Hangi or Australian earth oven

- The process of making a Hangi my way.
Just a note because a few people have perceived the video title as me saying a Hangi is an Australian thing, I apologize, it's a New Zealand/Islander tradition, the title is meant to be tongue in cheek as in I'm Aussie not Kiwi and so I do Australian earth ovens. Nonetheless, I have great respect for the Hangi method, the Kiwi People and their beautiful Islands. My visits there have been some of the best trips of my life!
You may notice at the end of the video that I sound a little surprised that it worked. That's because this was our third attempt after a couple of failures, so it felt good to get it right.
By the way, the meat was absolutely delicious with a hearty smoky flavour.
You can also cook the vegetables in the hangi, just put them above the meat, with the hot rocks below.
Experts tip: After digging the hole, it can help to "pre-heat" it by starting a fire in it early on, then removing as much of the embers and ash as possible. (hence the black ashes in the hole in the video) - Авто та транспорт

We have an indigenous version too, though ours is a little different and the word hangi obviously wouldn't have been used here.

Boss, if you want to make a good crackling with the pork, its best to put it skin side down in the basket. Then the heat will be directly on the skin instead of the meat. Its also a good way to stop the meat from drying out. 💪

We traditionally cook all our kai/food in the same hole.
I am only assuming you all were cooking your vegetables over the oven?
In any case, we would use two baskets separating the meat at the bottom, while the vegetables sit at the top.
Then I personally do a karakia/prayer and hope the pork and chicken are cooked properly😁.

If you are near a quarry, good chance they have basalt rocks. These are the go, and a six pack of beer will convince most quarry owners to spare a couple of rocks. They should last about three or four hangis so it isn't a bad investment.

that fire was too small and didnt get those massive rocks hot enuff... should pre-heat the hangi hole by putting the fire in the hole... ur just gna have to shovel the ash out of the hole then chuck the rocks back in... thats the staunch and guareenteed way of getting it cooked... bloody ozzy...

If you can get a mesh fence place over hole an stack wood an rocks over it the heat will heat hole an the fence net will catch the rocks so all u have to do is empty the hole of ash then place rocks in.try set the wood up as a square an place rocks on top an middle make sure there enough wood to heat the rocks you'll know when they hot rocks will go white use river rocks be careful tho as some can explode. to good for giving it a go kia ora bro
