But it isn't much more work. He still had to chop all that stuff up, so while chopping, the onions and stuff could have gone into the pot along with some butter. That stuff could have been cooking a little while he was finishing chopping the other ingredients, and then just dumped the rest in as it was finished. The point is that the veggies would have got a minute or so of sauteeing in, rather than none, at no extra work.
when I make chicken noodle soup my secret for getting tons of chicken flavor is browning the chicken in a really hot pan until the chicken gets browned and you get lots of brown stuff in the pan. Then deglaze the pan with the chicken in it and scrape up all the brown stuff and pour everything into the soup pot.

I caught the stomach flu on Tuesday and had to make chicken noodle soup. Boil pasta, strain, another pot to start the soup. This would have helped a lot! Should have got sick 3 days later.

Dang, I hope you'll feel better soon! Everyone and their dog seems to be sick with the flu currently. My self-pity chicken soup goes like this: bung sliced chicken fillet and crushed tomatoes into a pot, with a little bit of chicken stock; cook until chicken's done. Add salt and a fairly big glob of butter; stir and serve, and feel marginally less sorry for yourself. It's not pretty either, but it's subtly salty-sweet, and has a good combo of fat, carbs and protein - and it's pretty dense in calories, which is what I look for in sickbed food when I have very little appetite.
I have the flu right now and gonna try this as soon as I'm hungry, with one change I like to add some greated ginger for seasoning, it adds a small kick which is perfect for a sore throat. Thanks chef 😁

last time when I didn't have time/energy to make a soup, I just threw my celeriac(root, not sticks), carrot, leek and onion into a food processor and pulsed it a bit until I had kind of pea-sized pieces, then threw that into a pot with a bay leaf, water and some black pepper and salt, and boiled that for an hour or so, that's all. Of course you can add pasta/chicken to your liking.
I bet it was tasty Chef John, but i can tell you are not Jewish, My Grandmother would be spinning in her grave with that final delivery, lol. ATB Moose

I can my own chicken and broth for just such an occasion. Two or three minutes chopping onions, celery, and carrots into spoon-sized bits makes an I-don't-feel-well-but-still-want-something-homemade substitute. Sometimes I even use broken spaghetti if I don't have noodles on hand.
Dear Chef John, I love your recipies but this is not a noodle soup, this is a broth/soup with rotini pasta added. If i ordered a noodle soup in a restaurant and got this i would leave. I am sorry for being negative, but i feel like i must correct you on this matter.

that foam is a step in breaking aminos into the oily puddles you see later on. that is what makes the real soup. I have been making the same "souper" fast version for years. Leave the foamy soap looking stuff and wait.
I use the same recepie but i add a bit of cream at the end. Also according to my grandma, it need the bones to make a "flou" soup works, also she use to add roasted chicken legs, which now i know its good to add some colagen to the body
One step soups is all I've ever made. Just bought some stock or plain soup base and dumped things in it, boiled for a while. But I might make it two step in the future, sauteed onions sound delicious

Minced garlic, bay leaves, and grated ginger. Add those to your chicken soup and you can actually feel yourself getting better as you eat.

If you're sick and want soup, I would suggest taking out the crockpot so you can have a large quantity that's there whenever you want it.

I do the same thing - in a slow cooker, but I shred my chicken instead of cubing it. Sry, I just have a thing against cubed meat.

Couldn't you real quick just sauté the chicken and onion directly in the pan for like a minute before dumping in everything else?

When I'm sick I make drunken onion soup. Lots if red wine, lots of onion, lots of garlic and ginger. Lots of pepper. Beef broth. Magic.
