It would be interesting to see you repeat this experiment with a 4.00 a pound (on sale) chuck roast that has been cooked sous vide for 24 hours first. I live in TX and we get nicely marbled check roasts frequently for the number I mentioned above. The Chef Steps channel had a video on the SV part. If you don’t have a SV machine, I’m sure you can borrow one because they’re cheap these days and lots of folks have them. The only criticism I have is that the florescent light you used at the end made the cross section of the meat look awful. I’m not a fan of those lights at all because of the way they distort and wash out colors. I’m sure that your steak looked great in person though.
Agreed I hate when the light changes up on my shots. I love when I'm outside because the true colors always shine through in the natural sun. I've been saying I wanted to do a chuck roast again... it has unbelievable flavor when smoked and seared!💯 Maybe I can get that done..🤔🤔 check out today's video and let me know what you think.
