Ingredients for Matar Kachori
For Dough:
Refined Flour - मैदा - 2 Cup (250 grams)
Salt - नमक - 1/2 tsp
Carom Seeds - अजवाइन - 1/2 tsp
Desi Ghee - घी - 1/4 Cup (60 ml)
For Stuffing:
Peas - मटर - 1.5 Cup
Oil - तेल - 2 tbsp
Cumin Seeds - जीरा - 2 tsp, coarsely ground
Fennel Seeds - सौंफ - 2 tsp, coarsely ground
Coriander Seeds - धनिया साबुत - 2 tsp, coarsely ground
Green Chilli - हरी मिर्च - 2 - 3, coarsely ground
Garlic - लहसुन - 5-6, coarsely ground
Ginger - अदरक - 2 tsp, coarsely ground
Red Chilli - लाल मिर्च - 1 tsp, coarsely ground
Salt - नमक - 1 tsp
Dry Mango Powder - अमचूर पाउडर - 3/4 tsp
Garam Masala - गरम मसाला - 1/2 tsp
Coriander leaves - धनिया पत्ता - chopped

How to prepare Matar Kachori?
1. Take 2 cups of maida, add 1/2 tsp of salt, 1/2 tsp of crushed carom seeds, 1/4 cup of ghee, and mix well.
2. Add water gradually and prepare a soft dough. Cover and leave it for 20 minutes to set.
3. Take 1.5 cups of green peas and grind them coarsely.
4. Heat 2 tbsp of oil in the pan.
5. Add 2 tsp of crushed cumin seed, 2 tsp of crushed fennel seeds, 2 tsp of crushed coriander seeds, add coarsely ground ginger, garlic & chillies , to the hot oil, and roast them briefly.
6. Add ground peas, 1/2 tsp of haldi powder, 1 tsp of red chili powder, 1 tsp of salt, 3/4 tsp of dry mango powder, and saute everything over the low-medium flame for 8- 10 minutes & garnish with chopped coriander leaves.
7. Take the stuffing out on a plate.
8. Knead the dough a little and divide it into small portions.
9. Take a portion of dough, give it a shallow bowl shape, add a stuffing ball, and cover the stuffing by collecting the dough sides.
10. Press the dough between your palms carefully and prepare all the Kachoris similarly.
11. Fry Kachoris over low-medium heat till golden brown from both sides.
12. Matar Kachoris are ready to be served.
13. Serve with Green & Imili Chutney
