Not so long. It quickly becomes dry so leftover paste can’t be used anymore.
What is wall putty or is the plater of Paris has more longevity?

Yes you have to be really careful. For me I don’t coat them as I only store them at home.
Do gesso your canvases first?
No. But sometimes I use gesso for my texture paste
