    Damn boy I'm a good old southern boy living here in Malaysia and I tell you,watching that good old boy make that grub sure brings back memories and makes my mouth water.I really wish I was back in Georiga eating my momma's home cooking

    slice the sides a few times before cooking, only bubbling up cuz the outside edge shrinks faster

    One thing about using cornstarch, I find it useful to pull some stock out of what you are working with, place in bowl and add cornstarch to that, then mix then add back to pot. If you put the cornstarch directly into what your cooking, it could clump up and makes it harder to work with. Whatcha think JB?

    Looks great JB! I made me a fried pork chop video just last night. I gotta get used to eating pork and chicken till these nonunion beef prices go down, my butcher wants $35 a pound for beef filets!

    Jb You should look in to Pea meal bacon!!I started making them a year ago. It has A lot of the stuff you are in to.Start with a porkloin4# brine add sugar,Garlic!bay leaves, sage ,and Thyme.Brine in frig for four days. pull out of bag and roll in cornmeal. Smoke till internal temp. hits 160.Cut in to 1" slices plate or have on sandwich with mustard and a slice cheddar !     At the rate you keep taking samples, it's a wonder anything makes it in the pot. Maintaining quality control is a tough job, ain't it? LOL
    You're right about that plateful. It just don't get much better than that. Yum, Boy!
    I've been getting collards fresh, and doing a lot of them lately. I go through phases...

    I found this very entertaining! There are no limits where the grease and butter can go with you man, ha ha ha. We eat much lighter than this, alot lighter! But its a great dish to try from time to time. Eat like this everyday and you will have health issues :-P

    JB boy you know you cook your ass off! That looks so good mmmmmmmmm. Now I made some pork chops for my family earlier this week, I did it the lazy mama way I cooked them in a bag, I marinated them over nigh and threw some onions in the bag with seasonings and some water with one of those oven bag cooking packets. I made some fried cabbage and rice to go with it. I like the way you smother without frying flour. Do you have a cafe or restaurant?

    Is it a lot of difference between the frozen collards and the "home grown", picked only after the "first frost" collard? I have heard if you season them well, cook them long enough, that they are very good eating. i have never had frozen collards, except the ones I froze.I enjoyed your videos very much. You seem to know your way around the kitchen, I am sure your family enjoys your cooking very much. thanks for the simple, southern dishes, keep'em coming!!

    Now JB I have been quietly watching all your Cajun cooking videos and have really enjoyed them. I'm in San Antonio, but my mom's family is from the Houma area. I have agreed with you on everything I've watched. You and I have so much in common. Southern Cooking, 3 Stooges and LOVE James Bond! But JB we have to part ways on the cornbread.     Why would you bake Bacon? Why not just fry it?
    This may sound stupid but what is Collard Greens? What I mean is what veggies is done in it?
    When I cook Chops I either pour mushroom soup over it or Salsa sauce.
    ...and don't call me Boy!
