When weaving a thread through, Sue Spargo teaches to use the back of the needle instead of the point and you don't have to worry about catching the base fabric. Easy peasy.
Stem stitch and outline stitch are basically the same. One leans to the right and the other to the left. I can't remember which is which but Sarah Homfrey has a UA-cam which explains it.

I have always used the mouth method. I was never able to keep the thread untangled any other way.
