    EASY EKŞİLİ KÖFTE
    Serving: 6
    Difficulty: Easy
    Prep. Time: 5 minutes
    Cooking time: 10 minutes
    1 L hot water, 4 cups
    1 pack, 400 g garnish (peas, carrots, potatoes)
    1/3 teaspoon salt
    For meatballs;
    Half onion
    70 g fine bulghur, 3 tablespoons, semolina or cracked rice works great as well. Boil and cool the rice before adding to meatball.
    1 egg white
    100 g minced meat
    1/2 teaspoon salt
    2 pinches of dry mint
    2 pinches dry oregano
    2 pinches cumin
    2 pinches of black pepper
    4-5 sprigs of parsley
    3 tablespoons flour
    3 tablespoons yogurt
    1 egg yolk
    1 lemon juice
    1 tablespoon butter
    1 teaspoon dry mint
    ½ teaspoon red pepper flakes
    Pour a litre of boiling water in a pot, add the garnish and a pinch of salt.
    Place half onion, fine bulghur and egg white in the food processor and pulse.
    Add the minced meat, cumin, mint, dry oregano, salt, black pepper and pulse again.
    When the mixture unites, add in the parsley and give it last pulse.
    To shape the meatballs put the flour in a tray. Flour your hands.
    Take the half of the mixture and make a roll with your hands like a sausage. Rub it to the flour then take out to your cutting board. Roll it into a cylinder shape by moving it back and forth with your hand and cut them into small pieces. Put the pieces into the flour tray and do the same for the rest.
    After all the meatballs are coated in flour, put them in a strainer, remove excess flour and transfer into the pot.
    Transfer the remaining flour into a bowl. Add the egg yolk, yoghurt, a pinch of salt and lemon juice and mix.
    To prevent the yogurt to curdle temper the mixture with cooking water. Then pour warm mixture into the pot.
    Melt the butter in a small saucepan, add dry mint and red pepper flakes, give it a stir and add into the dish while the butter starts to brown.
    You can eat this very easy, affordable and heavenly comfort food every day! Enjoy with your loved ones! ❤️

    I always knew I was Turkish from my father's side. His mother, my grandmother, taught me how to cook. My family primarily spoke English and we took on American culture as our own. So many comfort foods without names I always assumed were just what we made to eat. It was there, the unique ingredients and flavors just because it's what we had. My father passed away and I never inquired about my Turkish heritage. But upon finding your channel, I realized how many mannerisms I see of my family in you, Rafika. I can see my grandmother, aunts, cousins and my father. The foods you graciously share here with the world, found me, and I, have found my culture. It's been such a heart warming experience to discover Turkish cuisine in its authentic forms and knowing my family passed them down to me all this time. Thank you much for the effort you put in all your videos! Your videos are imbued with warmth and love; I feel like I'm watching a family member and my day feels less lonely.       @@marlies7444 indeed. Frozen. Just add to boiling water, or boiling soup stock. Very handy for working parents to make easy tasty and filling soup or dish. Boiling time depends on how big you make the small meatballs.

    I made this soup this morning. It so delicious. I love the meatballs. They are so soft and just melt in your mouth. It's creamy so i think I'm eating lots of calories. I love the tartness too. That is a new flavor to my pallet. I love you and your team. Wonderful people.

      did you make the recipe? did you use 1lb (454g) of meat instead of 100gr? I am also trying to make this recipe in the US and the smallest amount of meat you can buy is 1lb of meat. but then the recipe becomes very large when you multiply everything it by 4.5. I am not sure if my biggest pot can handle it.

      Yes. In some recipes similar to this, chefs first fry it in a pan and then add it to the soup. But when you do it as in this video, it saves time and

    I’m 50 and got braces a month ago. Bc of this my joy of food has gone way down given that I can’t chew anything that I used to love to eat. Basically, I’ve been eating plenty of sounds recently (roasting red peppers for a butternut squash soup I’m making tomorrow currently). This recipe is def something I’ll have to make. The meatballs are much easier to eat as it’s minced and the soup helps to fill me up. I def needed this recipe for some variety as I still have another 11 months left with these braces 😣.

      In America it's often like that as well. But I think its because not everyone is adventerous.
      I have that problem with trying to get good chinese food. I watch videos of what looks lke authentic chinese food in NYC, and meanwhile here in TN we get orange chicken. 😢
      We have actually have about 6 to 8 greek places in our town. They all have the same few dishes. Gyro or falafel on pita or a platter, with humus. I lnow that that is not all of what greek food is about. And no turkish restaurant.

    Love this recipe but you should never / ever allow to have additional pressure put on you with people shouting and counting time.     I still make your red lentil soup when I have friend over for a meal. They never have only two helpings…they always have three! And then they still enjoy the main dish abs dessert afterwards. The lemon takes it to a different level! Thank you for al, your recipes. ❤

    Does anyone know if you can substitute quinoa for bulgur in this recipe? Bulgur is not easy or cheap in the US. I will try with quinoa and let you know how it goes. Refika said that you can substitute with semolina or cracked rice work but I want to try quinoa as it is healthier.

    Its so interesting to see how you make it in Turkey! Love the tip with kneading the meat and preparing the meatballs before. I think I will do this from now on. Here in Romania we also make meatball soup, it's my favorite. As a comparison, we make the meatballs from 400 gr beef or chicken meat, we add 1 onion, 1 bunch of fresh dill, 2 eggs, salt, pepper, paprika, a tip of knife of cinammon and 12 crushed coriander corns. The soup itself: we sauté 1 onion, 3 carrots, half of celery root, 1 parsnip, add water, about 5-6 liters, 250 ml tomato sauce, mixture of cream and 2 egg yolks, spices, the meat balls, 1 cup of "borș" (fermented grains juice) and in the end a bunch of fresh lovage. 😊

    "If you have a kid..." Yesss! Child labour (joke) With us, my dad had us peeling shrimp and garlic, something big adult fingers found difficult.
    I will definitely try that flour rolling trick for making a lot of small meatballs very quickly. I also love that the leftover flour is not wasted.

    Why frozen.
    Certainly not for children!
    I have been to Turkey. Am from India and a great fan of your channel.

I am in the final edits of my debut novel "Queen Bee and the Turk: Take 1" and currently writing the page where I would like to ask people to donate to earthquake relief for Turkiye and Syria. You have been an inspiration and source of laughter through my whole writing process and I would love to donate to the charity you recommend.     the smallest amount of meat you can buy in the us is 1lb which is 4.5 times the amount of meat called for in this recipe so you have to multiply everything by 4.5 including the water... That means you need a pot that can hold 1.2 gallons of water plus al the other ingredients.

    I make a Latvian soup similar but with Sorrel which gives you the lemony flavor. So, if you added sorrel to this soup you would not only get the sour taste but also more vitamins. It looks great and in winter that is just what you want a thick comfort food. Not sure if you need the butter and mint and peppers. Doesn't it take away from the taste of the soup? Just asking.

    This looks like a Bulgarian traditional soup it's cousin but we make it with yoghurt and tomatoes potatoes and in the meatballs rice or bulgur celery and carrot
