    Mmh! calabar women - owner of the delicacy & recipe, the water leaf comes first before the edikangikong leaf (vegetable leaf). Also when cooking okazi (afang) or editan leaf with water leaf. Don't necessarily add onions to avoid change in the taste of the leaf or soup. Thank You. Good Job!

Edikang hikong is not my native food but I love it from the very first time I tasted it back in Uyo and I will love to know to cook it. In order to have a perfect looking Edikang hikong like yours, I will like to know the other things you added when you added grounded crayfish. Thank so much for this wonderful lesson

    Nice soup. How how do u extract water from waterleaf so it doesn't make d soup watery.

      Thank you. I don't extract water directly from water leaf, it can be put in a strainer so the water can drain out. Some people rub water leaf between their palms to extract liquid, but I don't like the texture this gives.

      You're not the only one mydear. The function of the water leaf is to make the ugwu soft. The ugwu will definitely overcook when once you put ugwu first.

      I have a recipe on this channel where I put the water leaf first. The longer water leaf cooks the more liquid it releases, the water leaf I used here had a lot of water, so I put the Ugu first so the water leaf doesn't cook too long and release more water than I wanted.
