Low Carb Mixed Berry Crisp with 0 Carb Crispy Crumble Topping

  • Developed a 0 Carb crumble a few years ago and it is delicious on so many different recipes. It is easy, crunchy and delicious and have used it to make a bunch of different fruit crisps. In this post and video I wanted to show you some tips and tricks to the crumble and how to make a berry crisp. And do a little experiment on if you really can swap oat fiber for bamboo fiber.

    Keto/Low Carb Mixed Berry Crisp
    1.5 Lbs. Mixed Berries (Fresh or Frozen, keeping carb counts in mind)
    I used Frozen:
    2oz. Blueberries
    2oz. Sliced Strawberries
    10oz. Raspberries
    10oz. Blackberries
    60g/1/2 Cup Powdered Sweetener (can use any alternative sweetener but powdered is 2x as sweet so may need more)
    1/4 tsp. Xanthan Gum
    Liquid stevia (optional)
    Crumble Topping: Can make extra, it's delicious even just baked on the side and sprinkled on top
    72 g Golden Monkfruit/Erythritol (6 Tbs. can use any alternative sweetener)
    30 g Unflavored Whey Protein Isolate (1/4 Cup + 1 Tbs.)
    30 g Oat Fiber/Bamboo Fiber (~1/4 Cup + 1 Tbs.)
    84-112 g Melted butter (6-8 Tbs., 3-4 oz.) Only add as much as needed for a crumble consistency
    (I used salted, if using unsalted add 1/4 tsp. Salt)
    Macros for 1/8th
    160 Calories
    12 g Fat
    29 g Total Carbs
    8 g Fiber
    17g Sugar Alcohol
    4 g Net Carbs
    4 g Protein

    I also prefer oat fiber over bamboo fiber.
    When making crumble, I add crushed nuts and very little oat flakes (yes I know not keto, but it’s not much)

    Mine is in the oven. I had a little left of Victoria's 2.0 flour (with oat fiber) made up and used it as the dry ingredients just to use it up, so it is an experiment for sure. Fingers crossed. Thanks for the inspiration. I will be making your recipe exactly next to see the comparison. I love your channel! This is going to be a staple at our house, I am certain. Oh, and thanks for helping us find a way to use those frozen berries that have been buried in the freezer. 😉🤞❤💫

    A little allulose in your topping would get enhanced browning. I can't wait to try the oat fiber version!

      True but it may burn for the inside gets bubbly and may keep the crumble soft. Allulose can be tricky. Hope you enjoy!

    ⁠I am SO excited to make this! Thank you! You mentioned that you make this with chayote squash too. When you cook down the squash, do you add apple flavoring, cinnamon, etc?
    Update: I made this last night and it was so delicious! I used oat fiber and added the little bit of cinnamon. Huge hit! About 1/3 of my topping sunk into the berry filling while baking, but it was still delicious. I will make this many times!

      I've seen people use zucchini for apples, as once you add the cinnamon it tastes exactly like apples with same texture too!

    Oh this is top on my list, I have rhubarb in the garden and freezer will make smallportions and freeze to see if it reheats good. TY

      I'm not sure, you would probably need less I'd think. Worth a shot, probably won't be bad and it's not a ton of ingredients.

    I have 5-6 different vanilla extracts some are huge others a quart size. I had to stop buying it because it got out of hand, but there is 1 vanilla bean I want to get my hands on the Hawaiian vanilla bean.

    Is the flavor different from the oat? Oat tastes like nothing to me, but I haven’t tried the bamboo yet. I just bought it.
    Do you know if bamboo needs to be cooked?

      I have mentioned it in other videos I sometimes get a flavor if there is a lot in a recipe but it was just more powdery than the oat fiber. I don't know about the chances of contamination with bamboo, if it's like regular flour or not. I ate it raw in my biscuit video though and mentioned the taste.
