The inside of the drum looks smooth so the beans are sliding, not tumbling enough and thus many are getting burned. It needs some slats welded lengthwise to the inside of the drum to stir up the beans more.
@@milo178i use a stainless steel hinge or L bracket to connect inside the roaster since mine is perforated or wired mesh roaster maybe yiu should give it a try but check if its food grade or atleast 304 SS since it will come in direct contact with the beans. May i ask what material you used for the cover? I might make one but square and have a borosilicate glass at the side to see the beans

Think when you take them off the heat you need to cool them down as fast as possible (get a fan and blow cool air through the drum?) They keep roasting after they come off the heat.
Many things wrong with this. Probably too hot and the heat source too close, uneven heat distribution because of variances in the roaster, starting with a cold roaster and keeping the coffee in the hot roaster to cool down. Even with the same setup you could get much better results if you change your technique.

@@whoami724y I made the cover from 0.4mm thick aluminium cover. I find that tickness easy to work with and yet not to flimsy.

Use an electric heating filament it should work perfectly 👌 also it won't burn it. it gets roasted uniformly.❤

Looks burnt, but is that italian roast? (I always seeing italian roast as the darkest roast but it looks burnt)
French roast. Good for French press or Vietnamese drip. Medium roast for Latte. Light roast for Pour Over.

You burnt it when you left it turning to cool. That can is still hot after the flames out
Some say its charcoal coffee, but for a manual roasting process it is good enough to make a good coffee.
