I admire Mario Baseball for going all out with the roster. The Switch Mario Sports games they’ve released haven’t leveraged the appeal of Super Mario Odyssey’s NPC characters beyond Pauline, but if Bandai Namco went all out like the old days, they’d fit in as many one-off Mario Odyssey characters they could fit in. People would be sold on the novelty of playing as a Tostarena dude alone I think.
Nice list. I remember really liking Pokemon Conquest but it's been a long time since I've played it. I remember it being pretty hard and I was really excited to reach the credits. Then I realized that the story mode was basically the tutorial for how that style of game actually works lol. The post-game where the other regions actually push back wrecked me as a kid.

I don't want Pokemon Conquest to come to Switch for one simple reason: I would never play another Switch Game ever again. Conquest would dominate the rest of my days. I love that game.
I've wanted to get into all of Vanillaware's games since playing 13 Sentinels on Switch. I loved Unicorn Overlord and I've recently started GrimGrimoire. The more the merrier!
There are very few games I play on Wii U and it’s because they have yet to receive Switch ports, it’s a matter of not if but when they get ports. The most obvious ones being Wind Waker HD and Twilight Princess HD these are no brainers for Switch, these remasters make enough tweaks and quality of life improvements to be the definitive versions of these games like using the Gamepad for not only gyro aiming Link’s bow and arrow and hook shots but for item management. Now none of this is mandatory, if you don’t like these options either turn them off or play them with a Wii U Pro Controller if you don’t like constantly charging the Game Pad, and the Switch is a tablet and the Pro Controller has the gyro from the JoyCons so it can be done. Not much to say on these two since they are again no brainers for Switch. Next is Yoshi’s Woolly World one of the better Wii U games released in 2015, another easy one as it doesn’t rely on the Game Pad so much that it’s impossible to port over. And when you compare it to Yoshi’s Crafted World on Switch they are clearly very different they are very different games with different styles. Woolly World is largely inspired by Yoshi’s Island on SNES whereas Crafted World has more in common with Yoshi’s Story on N64. So porting Woolly World with the additional content from the 3DS port, makes too much sense.
Honestly the games I REALLY wanted on Switch has either came out or is coming out. Though right now? I'm still hoping that Metroid Prime 2 and 3 will release on the Switch before the 4th entry comes out. I only ever rented those two games and never owned it, which means I never got that far in those games. I will also add that Woolly World is wonderful, and would love it as well. I also just want to say your videos are amazing, I look forward to seeing more of them!
There was a time, years ago, where I wished every Nintendo game under the sun was on the Switch, but my love has cooled a bit as the tech has lost some of its luster (Switch 2 pls). I still feel very spoiled to have Paper Mario Remastered (one of my all time wishlist re-releases). But the one Ninty franchise that's still fallen through the cracks is Chibi Robo. I desperately want a sequel to the GC title, but even a remaster or straight up port would be so magical to have. I don't know much about the DS title, but Chibi's been done dirty with terrible spin-offs for decades! Cleaning games are so in right now - bring the little guy back!

Odyssey-themed ballparks would be cool too! Way better than generic forest, desert, volcano, etc.
