    Just tried it. I used your internal temps and sear at end method. Might be the best steak I ever had. Def better than Longhorns.

    Leave it to you to come off the top rope. That was a cool trick using the spit rod and roty fork. Perfect medium rare. One hot fire. Nice job.

      😁 No...not naked. I spray painted it High Temp Silver. I like Stainless pieces and parts......and like the look of the silver.

      @@felixs1340 Years and years and years......also have my WSM smoker painted. If it gets a scuff.......just give it a touch up. 😁👍
      You know they sell different colored Weber Master-Touch Kettles.........and it would have that shiny enamel to it. All in what You want.

    Medium to almost medium well. But I do like using your rotisserie utensil to cook it. I made my own Vortex and I would still recommend using a seasoned Weber sear grate underneath it but with the wider side up and the grate flipped so it’s above the adjacent wire rack.

    Steak on a stick would be my idea of a cave man steak. I was worried at the beginning that you were going to go straight on the coals. Then, I recalled that you used lava rocks in your cave man steak challenge. So I was thinking "No he's not!" Then you brought out the stick, and I was like YES! Brilliant use of the vortex and center grate cut out. Thanks Ken.
    BTW great looking Rib-eye.

    You were not kidding when you said you were not done.
    Will try the closed vent next time i use my poortex (am making a new slightly larger one based on measurments i got from Biggs, so i should be able to get the temps a bit higher if needed).

    This is is an original and awesome idea! You sir have started the next IT thing to do! You need to challenge people to try this. It looked amazing and just plain old fashioned fun! It's like making hotdogs camping with those weenie sticks when we were kids but with a Weber and a Ribeye! I give this video a 10! That good sir is metal!! Woooohhhoooo \m/

    How about using the cast iron insert instead so it doesn’t get ruined by the high heat?

      I wouldn't do it. I'de only recommend using Stainless Steel grates. If you try it.....let me know how that worked out. Metal On!

      Works great on my cast iron grate!
      I sear the steak first, then cook it indirectly.
      To avoid over cooking.
      The hot surface is what actually creates the sear, not the fire. That's why you can get a great sear with a cast iron pan over an electric oven.

      You gotta make one! A Stainless mixing bowl with the bottom cut out......I can see the Vid now! :-)
      I actually have a very small mixing bowl that I plan on hacking...just for a smaller direct cook. It will hold and use less charcoal also. We'll see??? Hack On! \m/

    I'm not sure why the vortex would damage the grate anymore than using a more traditional methods like coal baskets, rails, slow n sear. the grate is always above the heat. What damage were you seeing?

      Trust me my friend! If you've never had or used one, make sure You are using a Stainless Steel grate and not Chrome plated or Cast Iron Grates because it will burn off the finish and then they will Rust! This Vortex is Not a SnS.......it's a Blast Furnace! 🔥 Don't believe Me....Get One!

      Hey PG! If a magnet sticks to them they are chrome plated and will eventually rust. I have several videos showing what Stainless Steel grates I replaced my Master Touch grates with. Metal On! \🔥/

    The sear really wasn't that good, part of the reason you use grates is to actually get a sear. You ever wonder why grill marks appear on meat? That is where the meat contact a hot metal surface! The air, and dancing flames do not keep heat in one spot well!
