Bonus! I opened up my PCs to take a look at the memory to see if I could expand them and I totally can! In other news, one of the PCs I bought was listed as 8GB but when I opened it there were two 8GB sticks of RAM but one wasn't seated all the way so I bought a 16GB RAM PC for the price of an 8GB. Nice deal there. I'm currently ordering more DDR4 RAM so all in I'll have 80GB of RAM in my Proxmox cluster. That's perfect for like 10 x 4GB VM K8s nodes with enough room to play with extra stuff and have some overhead.
Ok cool! You're not the first person to recommend Talos. I just finished getting Proxmox installed on all three nodes and joined them to a single cluster. So now to figure out how I want to provision VMs. I'll definitely give Talos a try as part of my version 1.

Nice haul! Personally, I’d do a k8s setup with either Talos linux or k3s.
