We’re blowing 45 degrees over the 28 degree ice block and the ice melts while the air temps come down. Once the coil is 36/38 the ice is gone and we start the cycle again. Coil to 28 degrees and so on. If your just telling the system to cool until the air space is 36 degrees every time they open the cabinet they just introduce 75 degree air and it’ll run forever, because once it was a block of ice inside it eventually blocks all the air and there’s no cooling. I know it seems strange. It it’s how cooler coils need to be managed. It’s called an air defrost.

There’s different thoughts on it. I could have used in airflow placement on this one but given the consistent freezing history, this setup was the way to guarantee it can’t freeze long term. To me coolers ALL get coils sensing probes and freezers get air temp probes. It’s that simple. Air defrosts take care of cooler coils, If it never satisfies and thus never air defrost then there’s a refrigeration issue that needs to be dealt with. Coolers working proper won’t need a defrost
40 plus years in the field here. if you're using an air probe mount it as close to the evaporator air inlet as possible to read the air entering the coil temperature. if you're using the electronic temperature controllers mount them in the coil, if possible, that said the average evaporator coil now a days has a 10 to 15-degree temperature difference of air entering the coil and leaving, if its a rare floral display case evaporator coil it will only be a 5- degree difference so you don't dehydrate the flowers inside of the case. the walk in style t`stats are notorious for being off on the set temperature by 5 degrees plus or minus, so after the unit stabilizes check to make sure it cuts out close to what the actual temperature is.

In your average refrigerator at home there is a freezer thermal switch in the fridge area and there is a solenoid in the freezer box area. I learned that if the freezer heater activation switch is not working it is because of the solenoid in the freezer box much like in this case I notice ice building up around the fins, this is what happens in the freezer that is freezing but does not cool in the refrigerator area because the ice creates a blockage of the air circulation canal that leads down to the fridge compartment. Do these large Industrial coolers operate basically with the same concept?
Yes the ice builds cuz the airflow gets reduced but in this case that happened because of infinite run time. Being a stand alone cooler it must satisfy and then air defrost with the box temp and evap fans. Forgive my other comment I responded to your other message before I saw this one. This one adds context 👍
So this machine would freeze up if it was fresh out of the factory? It feels like you treated the symptoms and not the disease. Also, they're totally going to mess with that digital controller. I might have labeled it with "this isn't temperature control, this is defrost, do not adjust"
From the factory it has an in air stream mechanical thermostat. Once they relocated the thermostat they created the issue. From the factory it’s managing the evap coil with evap based temps. Not cabinet temps. Your correct anojt the statement of it was running. Proper it wouldn’t freezer. Running proper entails satisfying and air defrosting. With a cab probe on a cooks line it’s gonna run full time and freeze. The previous attempts were treating the symptoms adding defrost timers to interrupt the condenser and force defrosts regardless of temps. Nonsense. I discussed the setup with the management and owner and they know they can’t use that as a temperature reference. Proper charge proper airflow, proper temp control management.

Even as someone who doesn't work in refrigeration, I enjoy the videos, they get my wheels turning and give me something novel (well at least to me) to learn. Keep up the work, and maybe some longer form videos, and you'll be the next "follow around the specialist and watch him do what he does" channel in no time flat.
