  • Almost every country has its own national spirit, yet Pisco is the national spirit of 2 separate countries, Peru & Chile! But exactly what is Pisco? In this video, I go over what is Pisco, Where it comes from, Its History, and how to Drink it.
    Pisco is a distilled spirit made from grapes from Peru & Chile. It's essentially a grape brandy but with a few key distinctions that make it completely unique.
    Peru claims it's been making Pisco for over 400 years. And the name actually comes from a city and port in Peru so there's some legitimacy there. Chile claims it's theirs.
    But honestly, I don't think it really matters too much who claims it or who was the original producer. The truth is both countries produce Pisco and we're all better for it. And also, Chile is the highest importer of Peruvian Pisco despite Peruvian Pisco not allowed to be labeled as Pisco in chile. Go figure.

    🇵🇪 Peruvian here,
    Love Pisco, If i had to describe it, it's strong like vodka but aromatic like a bouquet.
    It's like drinking flowers and it has no nasty burn
    just a deep warm feeling in your chest.
    Anyway Chileans are our brothers so it makes sense we have the same love for Pisco.

    Regarding the rivalry with Chile, Peruvians do not want problems with anyone🙏, but if we are very passionate about defending our legacy and culture, Peruvian food is all over the world and is one of the most recognized on the planet, I have friends from the United States They say that there are more and more Peruvian food restaurants that they see that there are many ... that makes me happy and what better way to accompany it with a good pisco sour.🥂 love from peru.💕
    Peru is a very, very diverse country of extremes! Although the best known place is in the beautiful Peruvian Andes with Machu Picchu🦙,
    the most popular Peruvian dish in the world is the "Ceviche" food from the sea, from the Peruvian coast🌊 and 70% of the Peruvian territory is the Amazon jungle🌴🌴explore the largest waterfalls in the world "Tres Hermanas Falls" and it has the largest and most extensive biodiversity with places like "El Manu" most tourists only visit the Peruvian Andes, but they leave without knowing 70% of the country ..., recently Zac Efron was in Iquitos and also in Lima in a Netflix documentary "down to earth" Peru was the only country in South America that I visit.

      Ive been hearing and seeing that Lima is a beautiful and diverse city with so much to see and do. I would to visit everything you just said, especially the waterfall! It's on my list now!

    Just to add a detail, Chile renamed an area called “La Union” to “El pisco-esquí valle” in order to claim the D.O.
    Chile has never had an historical region named Pisco.
    This is a fact.
    Sharing it also isn’t a sound business option for Perú because the strict way of making pisco in Peru is costlier and necessary if you want to claim that it is a 400 year old spirit AND the purest essence of the grape.
    Chilean pisco allows for additives (foreign sugar and yeast, double/triple distillation, rectification with water to proof); Peru does not.
    And here is a fun fact: a considerable quantity of Chilean pisco used to be aged in barrels. They only stopped because Peruvian pisco started making in roads abroad as a 400 year old CLEAR spirit. It forced Chile to have to change up their whole game.
    The problem with aging pisco in barrels, as well as double/triple distillation, is that you are no longer making pisco; you’re making brandy.
    Fun fact #2: Peru doesn’t import any pisco from Chile.
    Fun fact #3: Chile no longer claims that pisco originated there, just that it has also always been made there.

      Also it is illegal to change the proof of pisco in Peru which is why you NEVER want to shoot pisco if you've never tried it before... Even then sip it if it's straight 😅

      @@Lui_Fern You're welcome. There really should be no conflict between the two countries just the same way Ireland and scotland make their distinction between whiskey, whisky, scotch, and the US with bourbon. It should be a professional courtesy/decency. Chile has done so much backtracking on their original claims of pisco originating there that they should just embrace what and how they drink their aguardiente. Bolivia has no issue calling what they make singani. I'd go so far as to say that Bolivia has even more of a claim to use the name pisco since bolivia used to be a part of Peru in the not too distant past and the silver mines at potosi played a big part in the development of pisco productions (wine from lima would spoil by the time it got to bolivia, pisco wouldn't).

    The debate is the name, not the quality of the spirit, as the video show both drinks are different they look different, I think Chile wants the name because it’s more comercial… but the truth is that the name originated in Perú 🇵🇪 ¡Que viva el Perú carajo!

    In Chile people don't care where it is from, I think it's more of an issue that Peruvians have, I personally believe Its origin is from Peru based on the historical data, besides that debate It is interesting to hear that Chile imports a large amount of Pervian pisco when they have good pisco in Chile and personally I only see Chileans drinking "Alto del Carmen" which is one of their most common brands. It is mainly mix with Cola Cola hence the name "Piscola" it is also combined with "sprite" but it's less popular than the piscola. I had a few Peruvian Piscos, they were okay, but there is a brand called "El Porton" than I liked for my Pisco sours. Currently I am sipping on this Chilean pisco call "Espiritu del Elqui" which is very smooth and has great amora to it. Salud everyone!

      @@Lui_Fern please refer to history, check info on the web, u will notice pisco's origins are in pisco City in Perú, as well as champagne is made in champagne.

      So why does Chile call their alcohol Pisco as well? And why does the U.S allow that? Because other countries allow chile to sell their stuff as Pisco as well

    bro, the only reason we like to claim pisco so much is bc of piscola 💀. and bc it can be bought cheap, it's much more patriotic. the terremoto is technically our national drink, but we all know piscola is the true contender.

      Thank you so much Joel! I really appreciate that. I actually have a video coming out on Monday where I take a deep dive into Peruvian Pisco and I do go over a few brands in that one for each classification of Peruvian Pisco. Só make sure to keep an eye out for that!

    Really Peruvian Pisco and the Chilean Aguardiente are completely different products. Pisco is Peru in a glass!!!

    Peruvian Pisco and the Chilean Aguardiente are completely different products. Pisco can be traced back 400 years to the port of Pisco and can only claim that name if it comes from the Coastal valleys of Southern Peru.
    Chile had to rename a region in Elqui to claim DO and that was about around the turn of the century in the 1800s.
    The European Union confirms that Pisco is only from Perú; thus, it does not import Chilean “Pisco”.

      False, you can lots of Chilean pisco all over Europe. As a matter of fact you find more Chilean pisco than Peruvian. Specially in Scandinavia

    It was in 1936 that Chile changed the name of the Elqui Valley to "pisco", its like another country named a region "Champagne" to claim champagne is from there, who in their right mind would validate this chilean madness? Many chileans both famous, historical and common people are against this name change and do not support Chile's claim to Pisco, like Gabriela Mistral.
    But in Peru you won't find anyone against it.

    Pisco is from Peru it was made when Peru was the great viceroyalty of Peru and Chile was sort of a police station.

    glad i stumbled across this! I knew there was beef between who has the better Pisco but i recently discovered the distilling process was complete different! (from kevin kos channel!) But just wanted to say thanks for the book suggestion! i heard about Ivy mix when i tried a Tia mia, and thought it was genius of the the sub in for mezcal in a mai tai. you definitely convinced me to pick up this book!

      @@Lui_Fern I will definitely take you up on that! where I live, sadly, our selection of pisco is so slim. We don't even have Barsol! :( I never heard of Singani and its definitely sparked my curiosity! I love hearing about national Spirits, and looking forward to Ivy Mixs book.
      When borders open up, I need to stock up in NYC. Back last year before getting into cocktails, i accidently bought a bottle of what i realized was Raicilla (thought it was Tequila!). Now i look back, I wish i didn't give it as a gift cause I wanted to try it haha

      And darn! Hahaha the regret from the Raicilla! Probably would've been a good one to try.
      And I'm excited for you to read Ivy Mix's book! It genuinely helped me out so much and really hit home for me. It was so great to see so many recipes with South American spirits in them!

    Interesting video, Peru certainly seems to have more protection around how they do it but they both can be good.
    For example whiskey is often thought of as akin to bourbon but I’ve found the best Kentucky mule I’ve ever made was with French whiskey instead of bourbon. Course if I’m going to make a whiskey sour I’m pretty sure I’m going to stick to bourbon for that.

      Yes wah more protection in Peru over the production! And while the best brands of Pisco I've tried have been Peruvian I recently tried Capel Pisco from Chile and it's not bad for the price!
      And that's very interesting I don't think I've ever tried French Whiskey. I wonder what that tastes like. But I think you're spot-on! A whiskey sour tastes the best with Bourbon IMO. Cheers 🍻

      @@Lui_Fern I'm.from Chile and Capel is the most horrible pisco from Chile. Cheapest and most common with teenagers drinking.. you need to try other brands. Mistral, Alto del Carmen, Kappa etc..

    Pisco es peruvian.. pisco is a quechua word the town exist before the Spanish come with the grapes.. el eque later change for elque pisko 1911.. theres one right..Bolivia have a drink call shingani..

    PISCO FIRST CAME FROM A PORT OF PISCO IN PERU 🇵🇪 CALLED PISCO IN 1700 FROM SPANISH CONQUISTADOR,IN CHILE GOBERMENT CHANGE NAME PISCO TO A TOWN IN 1930 to call pisco to their brandy. Little history!

    Try Bou Barroeta Luxstelle (aged 9 years) and everything else will taste like rubbing alcohol no matter whether it’s Peruvian or Chilean.

    "The Commission Regulation (EU) no.1065/2013 solved this conflict basically by stating that Peruvian Pisco shall be protected as a geographical indication (PGI is registered as “Pisco”). Yet, this does not hinder Chile’s use of Pisco for the products originating from Chile, since Chilean Pisco is protected as a protected designation of origin (PDO is registered as “Pisco”) within the EU due to the bilateral agreement between the EU and Chile. Despite being classified differently, both Piscos are protected equally under the EU Regulation on the Definition, Description, Presentation, Labelling and the Protection of Geographical Indications of spirit drinks. In practice, both countries can use the term Pisco and claim protection for the same. "

    I am not a big fun of Barsol pisco. It taste almost like a Chilean pisco. I would go with eyes closed for la caravedo quebranta pisco. Even to have in your well in their many varietals or to have it puro.

      Interesting! In my well we have Caravedo Acholado and Macchu Pisco. Barsol i keep a few for the back bar. I hadn't heard that perspective of it almost tasting like a Chilean Pisco before. I'll have to go give them another shot to see

    it's only some Peruvians who obsess about this rivalry, in Chile the majority of people by far don't care who Pisco belongs too or which one is better. We drink it a lot in Chile cuz it's cheap and nice to get drunk to with friends :P

      @@davidquispeescudero3351 who's the thief tho? i dont really know who pisco truly belongs to, there is also evidence that it could have come from Chile, both sides have arguments on their favour, but i personally couldn't care less. many countries in the world fight for dumb things like this and im simply not interested to argue about it.

    Off course it is Peruvian, with denomination of origin and from the town of Pisco which is 234 km south of Lima. I recommend Viñas de Oro Acholado, Cuatro Gallos Quebranta, or Demonio de los Andes!!!

    Pisco is from Perú... I was there and visited the city called Pisco also did my research. Chile only copies the name but their product is not the same. Chile's alcohol is good for cleaning my toilet..

    I’m last minute to this discussion, but I just want to point out something very peculiar about cultural appropriation and where this anger and upset comes from the Peruvian side, as I am Peruvian but my grand parents from my mom’s side are Chilean. I live in the USA, after everything we have been through here in the last few years, we have a better understanding of why there is so much anger from the African Americans towards the anglo Americans, and its because of racism, and discrimination.
    Peru being of majority from indigenous populations, they have been stripped from their land, culture, music and freedom for centuries.
    Cultural appropriation is real and is more pronounced towards the indigenous population and blacks in latin America. The European descent that were stablished in south America had privileges over its counterpart dark skin citizens.
    In my opinion, that some Peruvians are upset about their food and maybe culture being appropriated its a reasonable behavior. In the other hand, I am not supporting hate by no means, but the discrimination that was inflicted by many white chileans to any indigenous population is horrible. We also have that in Peru and all over latin america.
    I do believe Pisco is from peru, but a country like peru has always been dismissed over the years as it is the underdog. Now I don’t mind if Chile has Pisco and we should share but with respect.

    Singani 63 is amazing. way better than Pisco in my opinion. the other two countries have made it very hard for singani to get out of Bolivia until recently

    Just a quick comment to say that the Control C is not a very good Pisco. I advise you to try any of the aged Chilean Piscos such as the Alto del Carmen Barricas de Seleccion.

      So I always thought it wasn't too great but had no other reference point, since I have been searching for an aged Chilean Pisco for a while and cannot find any here in MA! It's been tough. But thank you for the suggestion!
      I will keep searching for an Alto del Carmen and maybe I'll find some online maybe to be delivered to me. I've had an idea for an Aged Pisco Cocktail for a while but haven't found any unfortunately.

    I wanted to say that the first historical records of alcohol come from biblical times not indigenous people. It was the Spanish who carried that ancient knowledge of distillery. The Incas, Mayans, and Aztecs simply did not have the tools, that is a fact of history. Even when Rum was first created from Molasses there was a strong Spanish presence in the Caribbean islands

      And by the way, in Peru they teach children from early school to hate chileans, this is mainly because they lost the war. they still make claims about how war losers are meant to call the shots, not the victorious ones. I grew up in Chile and we never talk about Peru other than historical records. You will find most comments here will come from resent and hate which was not uncommon in nations that lost a war, like Mexico against the USA. As long as these claims of the Pisco origins come from Peruvians they should be taken with a glass of water. Spanish records show that Peru was easily colonised first, and therefore it's likely that alcohol was produced there first, but to claim the Peru "invented" distillery is just ludicrous

    You said it they made it after. They copied Our Peruvian pisco even the name of the city. If you do your research you can see that's not the only thing they copied. Here in usa sometimes I find Our Peruvian Inka Cola soda level as Chile which its annoying cuz Inka Cola says it on the the name Inka from the Inca culture from Peru. And like this so many others things

      @@Lui_Fern yes. Suspiro a la limeña, chilimoya a peruvian fruit. Here you have to read a bit about the antiens cultures in Peru and how they domesticated almost everything kind of food. Potatoes, chocolate, corn...etc.etc.etc. before any other cultures. Peru has the oldest civilizations also.

    Perú and Chile¿?. Wtf¿? Chilean drinks is completely different. Compleeeeetely different. Chile uses water, wood and sugar...Peru's one just grapes. They cant be compared. Just they cant. Vino vs cognac¿? They just cannot be compared.

      Fair enough. The Chileans definitely do things different. So why are they named the same thing? I'm just trying to understand.
      I can definitely see how they do have differences, I haven't seen any aged Piscos here where I am yet (*though I would love to get a bottle). And cutting it with water definitely isn't the same.
      So you dont think you can compare them? even when explaining what each is?

      @@Lui_Fern the history of Peruvian culture is very old, when Chile as a country did not exist ... Peru was already an important colony that covered almost all of South America "Colonial Peru" gave a lot of culture in Latin America and there is always rivalry for this since Chile does not recognize this Peruvian legacy.
      Example.. If dishes like ceviche are present in all of Latin America, it is because it expanded when Peru covered a large part of the territory now called South America.

    You talk about the history of both countries where pisco is “from” and then you mention there are two pisco towns/cities and its controversies but you FAIL to educate the fact that Pisco from Peru was established in 1640 while pisco elqui in chile had 2 name changes (originally la greda and then la union) before it became pisco elqui in 1936. When you say you don’t care who invented it then it shows you really don’t know what you are taking about. Next time, please do a fact check

    In Chile we drink Pisco just to get waisted, whenever we want to drink quality we drink wine.
    On the other topic, we Chileans are used to Peru’s whining about their national which is cringe and sad. Chile has always done better than Peru and they have this kind of inferiority complex I guess

      Si un chileno quiere tomar un Pisco de calidad, solo tiene que ir a cualquier establecimiento autorizado y pedir Pisco original es decir peruano (Chile es el principal comprador de Pisco del Perú), lo de la anécdota de engordar es por tomar un brebaje de aspecto turbio que le tienen que echar caramelo y lo añejan en barricas y que se atreven a llamar Pisco, además de ello para que no sepa solo a veneno le tiene que echar Coca Cola,hasta allí llega la originalidad del chileno, intentan imitar un Cuba Libre pero solo queda allí, en un fallido intento.
      Por otro lado los chilenos son insidioso e hipócritas y no quieren a los peruanos de eso ya estamos acostumbrados pero eso se debe a que en la historia siempre fueron segundones, no así el Perú y tienen un complejo territorial tremendo, Chile es una raya, una tripa si se sale el mar adiós Chile por eso codician los territorios de sus vecinos y sus riquezas, no es difícil entender su envidia y frustración por no poseer la riqueza y cultura ancestral de su vecino el Perú por ejemplo.
      Finalmente,r una chilena escritora inteligente describió perfectamente la idiosincrasia de sus compatriotas:
      El chileno tiene un complejo de hace mucho tiempo, racialmente quiere ser Argentino y culturalmente Peruano" Isabel Allende 2004

    So if we call it grape brandy instead of Pisco there is no conflict anymore? To me Pisco just means unaged grape brandy and I think people should focus on the quality of the individual producers more than the semantics. Peruvian Pisco is made x way, Chilean Pisco is made y way. If you prefer your Pisco in either style than just buy that one but don't put all these butthurt comments on the internet.

      I would agree with you but it's a bit more deep than that. It's culturally ingrained so while I can sympathize with what your saying I think it does undermine the history and culture in the region.
      I do believe a solution needs to be found because I agree with you. I agree that too many people argue over whats original or better instead of enjoying both.
      I point to the situation with Singani. It's essentially very similar to Pisco and other Brandies yet they decided to have their own name and have largely escaped the hate.
      I don't know what the solution could be but at the end of the day you are very correct.

      The solution is found - neither is just called Pisco.
      It's either Pisco Chileno, or Pisco Peruano. Each with their protected denomination and standards of identity. They're quite different in production. So, the question is, is it up to the producers to inform the consumers the difference? Or is it up to the consumers to find out?

      Revengeful? Nah. Peruvians are just stating the facts. They are not the same products. One can trace the origin hundreds of years vs the other had to rename a region to claim a DO. Isn’t that a little fishy?
      Imagine if Florida start started making Whiskey and they called Bourbon? I guarantee Kentucky would be really upset and bitter about it.
