It has to do with moisture content and how long it takes to dry out. For a bacteria colony to take hold, the food must remain most long enough for that to happen. The thin patties and small burgers McDonalds makes dry out to quickly. That's why. Cook a similar sized burger yourself and it will do the same thing.

Fast food, food or at lest most does not mold or decompose because it is not real food like most food these days if you won't to know what does not have anything in it that you should not have in it look for a U on the package what it means is that it is kosher/ doesn't have any toxins in the food.
