You guys are amazing, I would have never thought about the olives but I think it works on this sandwich, I've actually watched this video before and it looks so good I needed to watch it again, my wife and I have been trying to come up with Christmas dinner it's her family that comes over some are picky and we are all on low-carb diets so I'm going to take this recipe and turn it into a quesadilla possibly add some spicy mustard and swap out the roasted red pepper with sweet peppers just because that's what I prefer but this is going to make one bad ass quesadilla on my griddle.

I wish I could post pictures here. I do a spatchcocked chicken under a brick. Instead of foiling the bricks each time I put a sheet pan over and weigh it down with the brick. A couple of flips and it is time for happy food. Another benefit of the bricks is I keep them on the lower shelf which is now close enough to the burners to act as a warming rack as I am finishing a dish.

Looks delicious!! Have you tried buttering and toasting the inside of the bread before applying the other ingredients? Bet that would add some extra good texture and flavor from the butter!

Whats up Troy! So I orignially tried regular butter and the butter browned far to fast, Hence the oil. Butter would be my preference and I had not thought of clarified, that is a really good idea! I would think it would work and add to the richness. Great suggestion! -N

Raised in New Orleans and live 100miles southwest y’all have got y’all’s sh-t together. About as authentic as you can get without the olive salad and round muffuletta bread from Central Grocery. (drizzle that other side of bread with good EVO and use as grill oil). Blackstone takes it to another level.
