How will sprint be mapped to this board if there are more than one board

Question? I am setting up a new scrum board for my team I just joined. They have none of their projects in Jira yet. So do I need to add at least one project in Jira first? Then create the scrum board? Can I just create the Scrum board first and then start adding the projects?

1- Some columns on my active board, I can't pull issues or glitches under them (I have previously worked on the workflow and it was working fine, not sure if someone from the team made any changes). How can add "Categories" on the workflow
2- Jira stories can be moved one status forward only (on my active board). Please can you advise why?
3- How can modifying the workflow remove some of the sprint issues from the current active sprint?
4- How can one track and know in how many sprints the story was built in?

how to manage sub-tasks on scrum board on jira? any way the sub-task can come under the user story?

By default, the subtask shows on top of the card the id of the parent item. However, if you want to see the reasoning behind an effective and simple scrum board, check the following: ua-cam.com/video/XZyQxcQpS_Y/v-deo.html

When do we create Epics or Versions? Is it necessary to create them before creating a sprint?

      yes

Epics are indeed not compulsory but visualize it as a single project as a part of a larger project. The single project may not get finished in a single sprint, so it spans across sprints, it therefore is an epic. Epic==sub project across sprints.

From an Agile perspective, Epics can be seen as features that usually take a couple (or more) sprints to complete. That's why you don't usually assign them to sprints (you can't even do that in a standard scrum board). However, if you want to know a bit more about EPICS, check this video about types of issues in JIRA (navigate to the EPIC section): ua-cam.com/video/kYvr0Q-WErg/v-deo.html
