  • Here's a simple recipe for Matar Palak Malai:
    Ingredients:
    Spinach (Palak): 2 cups (blanched and pureed)
    Green peas (Matar): 1 cup (boiled or frozen)
    Fresh cream (Malai): 1/4 cup
    Onion: 1 large (finely chopped or pureed)
    Tomato: 1 large (pureed)
    Garlic: 4-5 cloves (minced)
    Ginger: 1-inch piece (grated)
    Green chili: 1-2 (slit or chopped)
    Cumin seeds (Jeera): 1 tsp
    Turmeric powder (Haldi): 1/2 tsp
    Coriander powder (Dhaniya): 1 tsp
    Garam masala: 1/2 tsp
    Kasuri methi: 1 tsp (optional)
    Oil or ghee: 2 tbsp
    Salt: to taste

    Instructions:
    1. Blanch and puree spinach:
    Wash spinach leaves thoroughly.
    Blanch them in boiling water for 2-3 minutes, then transfer them to ice water to retain their green color.
    Blend the spinach into a smooth puree and set aside.
    2. Prepare the masala:
    Heat oil or ghee in a pan. Add cumin seeds and let them splutter.
    Add minced garlic, grated ginger, and green chili. Sauté until aromatic.
    Add chopped or pureed onion and cook until golden brown.
    Mix in the tomato puree and cook until the oil separates.
    3. Add spices:
    Add turmeric, coriander powder, and garam masala. Stir well.
    4. Combine spinach and peas:
    Add the spinach puree to the masala and mix well.
    Stir in the boiled green peas and let it simmer for 5-7 minutes.
    5. Finish with cream:
    Add fresh cream and kasuri methi (if using). Mix well and cook for another 2-3 minutes.
    Adjust salt as needed.
    6. Serve:
    Serve hot with roti, naan, or steamed rice.
