Harvesting Mitoyo, Rosita, Ping Tung, and Little Fingers Eggplants.

  • We had our first big harvest of eggplants recently so I wanted to share it and talk a little about each type of eggplant. I've grown Rosita and Mitoyo before, but this was my first year for growing Ping Tung and Little Fingers. Our two Ping Tung plants are producing very well, and from what I've seen of the Little Fingers plant, it would make a good container eggplant. This is a chance for folks to take a look at 4 different types of eggplants all at once. Be sure to let us all know what type of eggplant you grow.     GREAT EGGPLANT CHOICES! We grow all of those AND Listada di Gandia, Black Beauty, Casper and Piccolo, which is a teeny tiny F1 hybrid.

      I think of all the eggplant that I've grown so far, I like the Mitoyo for taste. We have a couple of ways we like to cook it. One way is to season it and fry it in olive oil, then while it's still hot sprinkle some parmesan cheese over it. The other is to peel it, then coat with light mayo, then roll in seasoned bread crumbs, then bake. Thanks for the support Rob! I really do appreciate it!

      I can understand that. It's a good one. I used to like Long Purple, but Ping Tung has taken it's place.

      Thanks Molly. I can decide if I will bake or fry some of these. We like the Mitoyo and Rosita, but I have tasted the Ping Tung or Little Fingers yet.

    What a beautiful harvest! I’m excited that I now finally have My first blooms on My Japanese long purple eggplants that I sowed from seed. They took a long time to grow & it’s a first for Me w/ any type of eggplant.

      I'm excited for you. If you have blooms, then you should have eggplants to eat in your near future! The long purple are such good producers that you should have them till frost probably. It's always satisfying to grow something from seed to harvest.

      You're welcome! You're set up nicely for an extended harvest then. One tip I would give is, when the plant produces a good crop and then starts to slack off and not produce as much, a good pruning will sometimes stimulate it to produce more blooms again, and following of course will be more eggplants.

    Good morning. I've never eaten eggplant before. My sister is teaching me how to prepare them. I planted it. I saw a flower and of course fido ran through the garden and the flower is on the ground. Lol. So hopefully I'll get something soon. The little fingers is going to be my goal for next year. Do you freeze them or anything so I can store them. No way can I eat as many as you have. I'm learning to store more for the winter. Veggies taste better when you don't have to go to the store in the winter. Lol. Thanks for the sneak video. I love seeing yours. Again have an awesome week

      Good morning! I only like to eat fresh eggplant, so as you can see, most of it ends up being given to family and friends and the food bank. I'm looking forward to trying the Ping Tung and Little Fingers. I really need to figure out a good way to preserve some. Hopefully yours will get some blooms and fruit on it soon.     So far, I just have blooms!! I wonder what is wrong? Yours look amazing. Do you can? How do you use and store all of your garden bounty?

      Thanks Susan! Well, if you have blooms, then in a few weeks you should get to enjoy some eggplants. We don't can, but we really should. We do freeze a lot of stuff though. And we dehydrate a few things. What we don't use ourselves, we share with family and friends. Then what is left after that goes to the food bank. It always makes me feel good when we can drop off a load of stuff to them.

    Hi, what one do you recommend for container growing - (like 2 gallon pots) from ping tung and little fingers. Which one grows shorter, and is more suitable for containers.

      Little Fingers remains a more manageable size. Long Purple is another one that I've grown in containers. I'm not sure how well they will do in 2 gallon containers. I usually try to use 5 gallon or more.

    Those are some really cool and interesting varieties. Was the Little Finger plant smaller in comparison to average? Like comparable to the smaller fruit? We pretty much completely abandoned eggplants(and okra) this year, but plan to go back next. The plants are really interesting even if we have been only slight fans.....so far. LOL Thanks for the share!

      Thanks! The little finger was in a container, so it might have gotten bigger in the ground. I'm thinking that it would probably be about 1/2 to 3/4 the size of like a Rosita.

    Those are pretty eggplants, How do you cook them, I haven't grown them before, I have seeds packets of them, that's as far as I have got with them.

    I just ordered 7 different veriaties of eggplants to plant in containers, What would be the perfect container size for eggplants? Thanks in advance!

      I really couldn't tell you the perfect container size for eggplants, Alanna. I have grown them in 5 gallon containers and they have don very well. Some types can grow very large though, so I'm thinking the larger the container, the better. You're going to have an interesting growing season. Good luck!

    I grew 4 different hybrids in a bathtub with 2 straw bales for first time with the bales as well as growing eggplant for the first time having very good harvest just cant seem to find a way to eat them that taste good to me any suggestions?

      My favorite eggplant meals are roasted ratatouille, eggplant Parmesan, and Szechuan ground pork and eggplant. Google will get you excellent recipes on all of them. If you run into another great one, let me know in an answer!

    i have a ping tung plant and the fruits look more like the little fingers. does ping tung ever become deep purple like that, or did i just buy an incorrectly marked plant?

      I only grew it last year, so I'm not sure if the color varies. Some of mine were lighter colored because they were below a lot of foliage and didn't get much sun.

      Usually over 100 days, but there are a lot of variables that an effect that number.
