You will Need
350g / 12oz of Self Raising Flour
85g / 3oz of Castor / Superfine Sugar
85g / 3oz of Softened Butter
200ml / 7.5 fl oz of Milk
1 Egg Yolk to Glaze the Scones before cooking

Since the heavy cream is a bit harder to come by here in Germany (at least in the normal grocery stores), I made the clotted cream with regular cream (just 32% fat) and had it a bit longer in the oven. Worked well. I used the liquid resifue of the clotted cream to make the scones, and they turned out beautifully.

OMG- that is so deliciously decadent! And, thanks for giving the Fahrenheit along with Celsius. I live in the US so that the helps a lot. I've been baking scones for years; my granddaughter and I love scones with clotted cream. I will send her this so she can make them too. I made them tonight ! Amazing! My jar of clotted cream arrived in the mail as soon as I got it I was making them. Yummy!!!!! your receipe is azaning sir :-) The scones are similar to our biscuits here in America. But the scones are better , sweeter and simply amazing ! So easy to make.

I made them yesterday and they were wonderful with butter and boysenberry jam and a big pot of Twinings 1709. Everyone devoured them. I will do clotted cream next time. I finally found a source for non-UHT cream but it's a bit of a drive.

Morning Angie, It's a Force fan oven but they do all vary a bit in efficiency i find, my new oven burns hot and I found it tricky to gauge the temps so I tend to give temperatures at the rates I would normally use.
If your oven is a fierce like mine you might find cooking on the lowest rack gives you a more even cook (out of the blow) or dropping the temperature 10 to 15 degrees, sadly my old oven was more steady but in time.I'll get used to this one LOL

Steve, please do a video on how to make double cream. Here in U.S. there is no such a thing! I made clotted cream with heavy cream; it was very delicious but not as thick as with double cream. I know there is a double cream maker out there but it is almost antique. Very hard to find. Can you please make Queen cake & Banbury cake. I would looove to see your version. Thank you & "Happy Christmas"!

+Brett West I like to keep it in the fridge also but you can leave it out to warm a little before serving, it enhances the flavours :)

Hello Steve! I made the clotted cream it was delicious! My scones were good but did not rise properly. When I bit into them they were still soft and nice, but not as fluffy as I expected. What can I do? Should I add more baking powder even if its self raising flour?

Alba Sánchez Evuna No don't use more baking powder, actually use *Baking Soda* soda rather than baking powder, powder is more for baking cakes, so if you can't get self rising flower use plain flour and a teaspoon of Baking Soda also known as bicarbonate of Soda next, handle ever so lightly the mixture to get the lightest of scones..

Hi Steve, I don't have a kitchen scale yet, so I use cups, teaspoons and tablespoons, but I don't know how many cups are in 350 grams or 12 ounces.
Char you need to get some scales.. You know I am not a fan of Cups with Flour as they can vary so much depending on how you fill em' and that can really effect the recipe, a packed in cup to a scooped cup to a sifted cup can vary up to 20% and then there are different cup sizes, don't get me started LOL... I should do a video on this.. For you, let me just say that a well balanced cup should be about 4 1/4 oz apparently :o)

The sun is fantastic, unfortunately I am stuck behind a desk LOL I dont have fan force oven hun, so Id reduce it I gather to 200C. Its an un even oven too, cook wise and it drives me mad as I always have to rotate the pans. Steve, have you made a battonberg cake before? ( spelling of the cake un sure of! LOL)

When serving clotted cream, should it be cold or slightly room temperature, like butter?
Warmth equals flavour, Cold looses that, so the nearer to RT the better.

Hey, Steve, would it make much difference if I dropped some cut up strawberries in and cut down on the milk? Or would it change the consistency too much? Or maybe blueberries and a touch of lemon juice and reduce the milk a little? Just curious.
Also, I've made some scones before that you should make around harvest or Chrismas time. Gingerbread scones! They are awesome! Not very sweet but VERY nice with some light apple cinnamon jelly. I've only made mini ones since I only take them with afternoon cream tea and I don't want to fill up on them every day before supper. But they are worth it!
Oh, and one more thing, it's about the debate between cream and jelly on scones. Over here in Michigan it tends toward butter first (we don't really make clotted cream or have any around.) and then jelly second. I'm not sure why, though for me I think it makes it easier to spread the butter before dolloping the jam or jelly on top. I'll be making clotted cream tonight so we'll see how it goes! :D

You can drop cut up strawberries in but the milk stays the same Kimberly, scones are great to play around with, you should try my Treacle scones, they were so so good. You could use black strap molasses if you can't get treacle.. or make it like I did.. ;o)

LOL I sometimes get criticized for too long a nails but I play Guitar and I have to keep them that way. I love my Guitar too much. If does have to be a raising flour but it's easy to add a 1/2 teaspoon of baking powder to the All purpose to make it a self raising flour. Hope that helps :o)

Brits eat five times a day? And all this sugar with fat? If it was just the cream and tea and pork they wouldn't all be so fat. They eat sugar five times a day!!! That means their insulin levels are always high...and then they add all that fat with the sugar...and it goes directly into storage since the insulin levels are so high!

Scones are pretty easy to make. Possible the easiest cake and yet so good if made right.
@@Steve-Owens You might say that, but mine have always come out flat, regardless of what I do and what I include. So now I hope the tide has turned on my rubbish scone-making days....
