You could had pre-freeze the onions in a gallon size zip lock bag in the freezer and saved a lot of hours in the freeze dryer. Once it was frozen, you could add the onions to the trays.

You can cut the time down by defrosting part way through the cycle.
Dont touch the read out display, leave it on.
Turn off the vacum pump by the switch on the back of the pump.
Open the drain valve to release the pressure.
Remove the trays and the shelving unit being careful with the wires.
Take a dead blow mallet and knock the ice off from the inside of the drum and remove the ice.
Put the shelving unit back in, be sure to plug the wire connection in.
Put the trays in rotating them from the original orientation.
    Close the front door
    Close the drain valve
Switch the vacum pump back on.
It will build back the vacum and continue the FD process.

You guys are so cute! I'm a newbie and have done a few loads so far. Can you over freeze dry? Sometimes I'm not sure when my food is dry enough. My first load I did onions and packed them in a Mylar bag. I used one oxyen absorber and after a week, the bag had not shrunk down at all. Upon opening, the onions had lost their crunch they had when I packed them. I live in the Sonoran desert so it was kind of shocking there was enough moisture in the air to cause any rehydration. So, now I'm putting them in jars like you with my vacuum sealer or I might put them in Food Saver bags with an oxygen absorber and then place those vacuumed sealed bags inside of a mylar bag with another oxygen absorber (or two) for 25 year storage. Any suggestions? It is possible to over freeze dry?

Hello and thank you ❤️ did you keep your oxygen absorbers in a sealed jar with a vacuum seal on the jar? I agree with you on the desert but if anything is left out it will become soft. We live in super high humidity and I leave each tray in the freeze dryer until I’m ready so no humidity sets in while packing. If it’s not ready it will have a really cold wet feel or even soft. When it’s ready it is very light and fluffy. The onions did amazing we put them in jars because until we could buy Mylar bags which we just got. I will give you the link. Bruce yesterday in my vlog yesterday he did a bunch of Mylar bags and the one bucket not covered the oxygen absorbers definitely pulled the bag tight. If there is a tiny hole or leak in the bag it can cause the moisture to sneak in. Bruce also found these oxygen absorbers to work better than ones he had before not to say that it is possible we got some that weren’t as good as another !?? You can ask us anything anytime and I will get back to you as soon as I can. I hope that helps. Thank you so much for your question.

Ok so I want to freeze dry onions i have so many and I always have so many go bad on me before I can use them. But was a little hesitant on putting them in my freeze dryer cause i've heard many people say they could never get the smell out. How are yall handling this? and also why aren't you using the Freeze dryer to vacuum your jars? you get a way more powerful vacuum.

Hello well I guess that’s a good question we don’t anything about using the freeze dryer to vacuum the jars. The smell there was none. I didn’t use the silicone mats jic. We too have so many onions so that’s why we did them in the past we did them in the dehydrators and I just put them outside on the porch because that smell is strong for sure.

@@dawngallop If you disconnect the tray holder and pull it out. Then you put 1 single tray inside the chamber. Take you mason jar with the lid on but not screwed in and put inside chamber on the tray. then hit the leaf on machine and tell it to run the vaccum let it run for about 5 minutes. Then all you have to do is tighten the lids. you can do about 8 or 9 jars on a large tray at a time. it will do a much more powerful vaccum then the food saver can.

Just use the FD itself to vacuum seal the jars and you will never need oxygen absorbers.
