Almond flavor gives it a bit more flavor than if you were to use 100% normal flour. It also softens the texture a bit. But if you don't have it handy, you can use normal flour as well.

Hi Janie! Thank you so much for writing! Do you have access to gelatine sheets? Use 6 sheets of gelatine instead or about 1 tablespoon of gelatine powder. That needs to be soaked in some water and then heated before combined with the delicious ingredients.
It is a cookie, so it's not as easy to cut as a cake. The top layer is moistened from the top and the bottom, so it is easier to cut. The base layer has more of the cookie consistency. If you want to make it easy to cut, you could brush on some milk on the bottom layer, before piping the cream. However, only do that once you have the cookie on the final serving platter.
I'd say one letter is enough for 6 - 8 people. I'm not familiar with pricing these types of products. If you're efficient, it takes 1.5 - 2 hours to prepare. The ingredients are fairly affordable. The flowers were actually the most expensive part of this. Probably $10 for the ingredients and another $10 for the flowers / decoration. The rest depends on your hourly rate :)
