The machines for slicing the tomatoes and onions is really cool. Cooking the onions in the bacon grease is a nice move. And cooking the burgers on the flat top and then the grill in interesting. I bet it gives a really good flavor.

Wait until you see the “Heart Attack Grill”. You eat free if you’re over 500lbs or something.
And the burgers are cooked in lard. You can get the single/double/triple bypass burger.

@@hawlowe1632 doubtful. I'm guessing he was trying to say uncooked which is unclean. Ever heard of trichinosis, Google it, eating raw pork / bacon like that will give you trichinosis. Always eat crispy bacon
No one should eat bacon that isn't fully cooked and crispy. Trichinosis is extremely serious and I'm sure you don't want to eat worms

Grew up on the edge of Lake Erie in WNY. Our local beach used to serve the best fries because they cut them daily from fresh potatoes. They did it at the county fair every year too, we lived a mile away from the grounds.
Something about beach food. It's always a cut above the rest.
.................. Middletown New York here. Orange County Fair. Same thing. I went there for the food. Back in the 70's it was all done by hand. We also had a place right outside the fairgrounds gate called Frankies Sausage bar. Sausage peppers and onions on a sub, with some special sauce they moistened it with. To die for. I would eat one of those as I walked in the fairgrounds. Then I would start looking for my next food cravings. I was a teenager.

Looks delicious! A grill cook taught me years ago to put the onions under the hamburger patty, (between the patty and the bottom bun), that way your tongue gets the onion flavor first with each bite. I tried it and it sure made a difference. Enjoy!

I am from New York area, I would say these burgers are more of a smashed burger (thin beef patty and smash down with a spatula), and not necessarily a New York burger (as there is so much variety). Some people prefer a thick more juicy burger (I do not). If a burger or cheesesteak is too dry, I just ensure to put extra sauce on it. I definitely prefer a thin burger (and you can always just add more beef patties if you like it thicker).
Agreed, also a fellow new yorker, and I know this is more of a pet peeve, but the onions should never touch the tomato in my eyes.
Theres no such thing as a new york burger
This is pretty much just a generic bacon cheeseburger + jalepenos. Most states don't have a specific burger associated with them. But NY is famous and so they just use it to make it sound authentic. I've noticed it in general, "American" food in other countries rarely is. Just as an example, go look at Korean "corn" dogs. They're not.
@@myth8644 New York City being the market capital of America leads it to be one of the highest grossing tourists destinations. With such a title this basically means to even thrive in the city even the mediocre joints need to be above average in terms of taste and quality and forget about being stationed in Manhattan if you ain't competitive. Sometimes I miss living there and then remember all the small apartments I had to suffer for ridiculous rates before moving.
I've never heard of a new york style burger. This is a smash burger which I've never associated with New York particularly.

9:48 That's not why they do it...they do it that way to be able to close the bun without separating the top of the bun from the bottom. It is also easier to wedge into the paper holder.
