- Chef and host of “Makin’ It”, Brad Leone, joins Ryan Callaghan in an Idaho wheat field for some winter honker hunting. After an early morning of gearing up, Cal shares with Brad his techniques for decoying, calling, and taking down incoming geese. With a plentiful number of birds in the sky it doesn’t take long for their barrels to heat up and the team to limit out. But what the heck do you do with goose meat? Brad is one of the main reasons I even gave hunting the time of day. When I watched his Bon Appetit episode going hunting for sage grouse, the respect he gave the animals was something I had never seen before. Watching MeatEater just reaffirmed it. Glad to see all the collabs with Brad 😊

Any video with Cal is an instant like button hit! I like a lot of the new groups coming into the meateater fold and i miss when it would be jani, cal, and steve just out doing their thing and having fun. Clay newcomb, imo, kind of is a dud. He just doesnt seem to fit in with the group! Glad to see brad on here btw!

This is just a great video! Brad, well done on this and Cal, it was fun watching you guide Brad. Between him and Snort, I felt like you were hearing cats, but it turned out well and that’s how hunting should be (in a good way).

We grew up deer hunting, but there were a couple old shotguns around. I tried as a kid but to this day, at 64, I've never shot anything from the sky!

Rinse wash repeat The blood out of Woodcock and waterfowl alike, then a slow salt brine for a day or two. Hit the grill while seasoned up and you’ll be happy. Even if you do overcook it the brine keeps it tender and moist
Snort makes me not feel as bad when my dog does the same when switching up bird hunting types 😂😅
My family used to have geese on a farm . We would bake a whole geese with apples for a few hours . Or we would canned geese meat

The reason goose is tough is because you are cooking it shortly after killing it. You need to age it in the fridge for at least a week before you cook it. Freshly killed meat will always be tough.

FYI brother letting your dog eat raw wild game is going to introduce her to a high parasite load - look it up if you don't believe me. Also, don't forget about the heart and gizzards!!!
I’ve never understood the people like goose, I’ve never served it to anyone and had them think it’s anything but beef
Absolutely right on the lack of respect geese get on the table from a lot of hunters. And a lot of it is absolutely that they have never eaten a goose unless it was overcooked. Same with ducks, particularly mallards, no respect on the table from too many hunters.
I remember when my son killed his first goose and wanted to eat it. The wife wanted to cook it like a turkey, 165* internal temp in the oven. I cooked it to 130* internal in a frying pan with butter. The result was both breasts disappearing in short order. The legs make insanely good jerky.
And dogs are a hoot. A guy I hunted with had the same trouble, it had hunted pheasants as well and it was convinced it needed to try to catch the geese as they landed and chase them into the next section as they flew away. You gotta love a dog with heart.

I was thinking the same thing. Especially beings that I main hunt my lab on the various upland birds in S ID. We go into the season steady AF and by the time we start hunting wf hard in the late season, that steadyness is long.gone.lol😊

Love me some waterfowl hunting, but it’s hard to enjoy listening to ya constantly yelling at the dog. I guess I’ve heard too many hunters across the lake yelling all morning and ruining the peace because they couldn’t control their dog in the blind.

I don’t know what their current situation is or Claire and Vinnies views on hunting but that would be some heavy duty A grade nostalgia with one of the coolest twists.
Even just Brad and Cal hunt and Claire do some magic cooking.
I have still yet to see on camera chemistry like Brad and Vinny had. Other than maybe Cal, Steve and Janni,
I don’t know what their relationship is like now, nor Claire but even if it’s just a pipe-dream I think that would be so terrific.
Back in the BA days, That got me into watching UA-cam and a ton of other interests I won’t bore you with but before or since, I haven’t seen a more iconic duo than Brad And Vin.

Corned Goose Ruebens are amazing!! We love them. Normally do them with snow geese and I pressure cook the breasts in beef stock after 7 days corning, then shred them. We prefer Canada's and Specks cooked like roast beef or in a sweet and sour with veggies over rice. Waterfowl Rocks! if know how to prepare for the table.

I'm a big jerky guy. I have turned entire whitetail into jerky and I've had jerky from many species over the years. My dad told me geese aren't edible so I had to try it. Goose jerky is far and away the best jerky I have ever had. I encourage everyone to try it, especially those who aren't keen on eating geese otherwise. Even my dad admitted it was better than any venison jerky he's had. You don't even need a smoker or dehydrator. Slice the meat into strips and put a dry rub on it overnight. Skewer it on kebab sticks and wedge the ends of those in your oven rack to hang the meat (don't forget to put tinfoil down to catch drippings). I cook mine at 175 degrees for 4 hours because that's the lowest temp my oven goes. I usually shut the oven off at the end and leave it in there till the oven fully cools down. Disclaimer: I've only ever had gas ovens and I've never tried this with electric.

He said" get your castiron pan hot add the Goose.
Cook until the Castiron pan is tender😳.
