Great idea! I've never thought of Italian "stir fry." Only thing I'd do different is not hard cook the pesto sauce on the grill top. Just add it at the end when plating.
not telling you what to do, but I think that would be a mistake - it would be like only adding the soy/egg/whataver on top of regular fried rice rather than stirring it in. you want whatever that part is to get in and around every grain.

After watching Ethan Chlebowski's video about "Pesto Pasta", he goes into great detail why fresh basil shouldn't be directly cooked. But I will make the "Italian Stir Fry" 1/2 with cooked and 1/2 fresh pesto then respond back with my blind data comparisons.
Awesome choice Sam, my favorite is steak fried rice. My wife is Asian and we cook a lot of Hong Kong style food almost every night. But try steak fried rice, it is amazing. Great job!

Why not marinate the chicken in Italian vinegar & oil for 24 hours ? I always remove that big white thick piece of rope or whatever it is that runs through the middle of just about every chicken breast. Is it a vein? Some kind of tendon or muscle? I dunno, but it's got to go before I eat chicken breasts.

I love making Chinese fried rice so this really appeals to me.. Think I'd also add some seafood (always have shrimp or prawns in my Chinese fried rice) so some shrimp or calamari. Love making my own pesto - it really does 'sing' compared to the stuff in jars.

I loved shaitaki mushrooms. I can't eat them now. I'm allergic to them. Which is a very oddly specific allergy. It was difficult to idenfity...as the rash didn't happen until about 2 DAYS later. But testing it...yup Shaitaki mushroom...and the Asain "Black button" cousins. I miss them...but I don't miss looking I've been whip with a Jellyfish and swarm of bees. I'm team Portobello now. Anyways.....just FYI for people with weird rashes. .... Ahhhh. from food.
Italian Fried Rice is genius. Dreaming of Pastrami, Prosciutto, and Cappicolo. What’s better is I can use my brand new STCG 7” Nakiri knife, which is the best knife I have ever used, hands down! It is well balanced and super sharp. It makes food prep a breeze. I seem to save time chopping, slicing and dicing, not because I move faster, (I don’t it’s SHARP), but because I cut things once, the right size, so easily. So happy I bought it. My trusty Wusthoff is now my backup, (which I paid more for btw). It’s a good knife, but it can’t compare to the Nakiri. Love it, thanks Sam!
I need to make this for my husband. He is half Sicilian and half Filipino, raised in Hawaii. This is SO very him!
