This recipe is a keeper. I just tried it out. The only adjustments I made are reducing the sugar to 110grams, using Japanese cake flour instead of regular cake flour, and replacing the spices to cinnamon. I made 2 batches: (1) a 7-inch round cake (2) 12 cupcakes with raisins. You need to adjust the baking time, of course. It turned out moist and buttery. I will experiment with All-Purpose flour next round.

It looks very moist and soft! I also prefer steam my pumpkin for making pumpkin puree, it's more quick and easy instead of roast it in the oven. Well done Fiona, this cake is perfect in this season! I'm editing just now a pumpkin recipe, good minds think alike 😉😘
Hi Valentina. Yes the steaming is a lot faster and it only took 10 min. The flavor and sweetness of the pumpkin puree remained original rather than a smokey flavor if you bake it. So I chose to steam just for that reason for this cake. And I love those pulps of pumpkin as well and you can really taste the pumpkin bites. We all can't wait your next pumpkin video, as what Jesni is anxious for that too 💖💕🌹💗

Hi Tammie, yes you can bake it in 8 inch pan. For this recipe, your cake might be quite low, maybe an inch high. Yes you're right, just watch out the baking time, might take only 45-55 min depending on your oven

@@WL1006 you're right about the calculation, just a reminder the total cake flour is 200g, if you're using 20g pumpkin powder, you'll need 180g cake flour. The reason you need another egg is because you're omitting quite a lot of fresh pumpkins there, you need to add back something in replacement
