Oh...thanks for inviting me to relive the life I had with my late Italian wife . ..sharing the pasta and meal ..so inviting. What amazes me is so many Americans have lost sight of our history. My. Loosest friends are in Oulins, France. We French had neighbors over for dinner, but first wine and cheese.we’d run into the town center.. pick up cheese, pasta.. a few chocolates wrapped. Then to my favorite Wine Shop. Bringing with us our weekly bottles.. two red two white. Normally for a couple of days at best. Very in expensive. Americans don’t realize French don’t over drink , rather they savor and dine. These wines are akin to three buck chuck from Trader Joe’s. My wife is friends with the founder of Trader Joe’s. They choose their wines in person .

@@Zoe-sj7of it’s only a drug if you let it become one! Drinking coffee is a drug, speeding is a drug, running is a drug, eating is a drug. If you allow anything or anyone control you then it becomes a drug. This gentleman shared a lovely memory that he had with his late (you understand what means right?) wife and all you can do is point out that they drank wine. Some times it’s not the alcohol that’s the problem, sometimes it’s just idiots like you! Don’t want to drink? Then don’t! Go gulp a red bull and be happy. You don’t have to shit all over people to be happy. And FYI have a glass of wine is not going to impair your judgment. It will however elevate your taste and conciseness.
@@Zoe-sj7of No not everything! Just a lovely meal and the wine is just a small part of it. A small pleasure in moderation with family and friends. Nothing wrong with that.

I totally agree. If I have a pile of dishes waiting for me to clean, it borderline ruins the meal for me. Cleaning as you go is the way to do it.
If you have to wait for the cooking to finish, might as well start cleaning the dishes.

There is so much warmth in this kitchen that I had to write this. Once I was with an Italian guy for 7years which meant spending many season at his mom’s place. She is an amazing cook and her kitchen was cozy like yours. We all cooked together had extended family lunches and dinners. It’s been 4 years our relationship ended and I avoided everything including pictures of italy so that I don’t have to face the hurt. It was a big loss for me as I also lost the connection with his family, his parents loved me like their own child and I loved them like my own mamma and papa, I even called them that which they absolutely loved. It’s my first time to actually ever write about it anywhere let alone so publicly. I never went back to italy again although my heart truly belongs there and perhaps I will gather courage to travel to italy again one day. Your family around the dinning table, the chandelier above, the warm lights in the kitchen and pasta on the table was like chapter from the past coming alive. I truly enjoyed your video, I am new subscriber and now I am hooked. Thank you for this awesome video!! It has brought back memories ♥️

Thanks a lot for those delicious recipes ! In France the « choux à la crème » are full whith crème « chantilly » : you whip the whipped cream very cold whith some sugar and vanilla ; and fill the choux with the chantilly. Bon appétit!

I so love to make cream puffs, and use the choux pastry to make eclairs also. Just amazing French desert. I always made food from scratch for my children, and 30 years later, they still miss it!.
I just want to say that I watched this video about a year ago, and was so inspired by how easy you made it look to whip up creme puffs for your family. I ended up making creme puffs for a family birthday a bit after that, and just recently I thought about the bolognese and looked up this video since it was so memorable to me! Thanks for sharing this look into scratch cooking :)
When I was a small child my mother would take me to a diner called Saunders in Michigan. We’d dress up and ride the bus there. We’d shop but afterwards for a treat we had our cream puffs filled with homemade ice cream and homemade hot fudge sauce.
As my children grew up we’d have this as our Sunday evening treat…..sometimes with homemade butterscotch…or pecan oozie topping….Sometimes fresh berry sauce and then topped with homemade whipping cream and a cherry on top….

I made cream puffs for my family a lot but I’d take the inside out of it and fill with homemade vanilla ice cream, put the lid on it and then pour homemade hot fudge over it.......yum...

My Mom made cream puffs when we were children and fill them with a vanilla custard type filling. I loved helping her make them. She also made these delicious puffed omelets in the oven in a cast iron skillet.
Sounds intriguing. What is a puffed omelet?
I had an Aunt that served wonderful meals in a small eat in kitchen and she always cleaned as she went …a great habit. Another is emptying the dishwasher before guests come over for dinner.

I’ve never made this but it reminds me of how I make my shepherds pie! I use the food processor to finely chop the onions, carrots, etc, and I let it simmer a long time. So good!

Shaye, my wife and I(and my kids) love watching your videos. We live so far removed from the rest of the world. We do work daytime jobs, kids are in sports, we own nearly 500 acres deep in the Ozarks,, raise beef, garden, and just have an amazing life. But, you guys make us think that maybe we would be happier sometimes if we cut the majority of our bills, homeschooled the kids and just spent more time together. Who knows the answer. At the end of it all, we could so easily look back at ourselves in our youth, and give much needed advice. But I don't think our youth would listen.

Nice! My mother used to make cream puffs but I never watched her make them, I didn’t know they were that easy, I think I’m scared of them, I couldn’t stop at just ...3!!! I’ve noticed the dripping faucet, that’s such a cool fixture, maybe I need to come fix it? You guys are too busy to 😂! Those carrots and onions you grew are awesome, 7 months, I cannot believe that... that is so cool!! I’m so envious of your root cellar! That was very enjoyable spending some time in your charming home, watching & learning. You're so right that it's a very different experience, & not that difficult to do, (depending on what your cooking I suppose), if you're able to clean up the kitchen as you go. It's easier to do things a few at a time rather than dealing with it all at once, so the same work, but easier & more satisfying this way. My mom taught me that way too, but I must admit, I rarely do it that way. My mom taught me also that it's best to always crack eggs in a bowl 1st, for various reasons, the least of which is in case any shells fall in. & was once watching a well known homesteader making a few quiche using her own eggs, herbs & veggies. You guessed it - there was a bad egg somehow & it stunk. She had to toss out the entire contents of all the previous eggs etc. I know it's not a frequent event, but it costs nothing extra to break the eggs into a small bowl, one at a time. You can even easily whisk the egg a bit or completely, before adding it to the total batch. I use a bent fork which easily fits into a bowl, or a cup with a handle.
Also I learned from Jacques Pepin, to tap the egg on its side on the table instead of on the edge of a bowl as that pushes the shell into contact with the interior of the egg, so it can mean some egg shell particles get into the egg mixture, imparting shells & also bacteria.So he also recommended washing the shells just before cooking them.
Note: Home grown eggs can sit unrefrigerated for a longer time if not washed, for some reason. That's something I learned from more than one person who harvests their own eggs.
It was a generous gesture to share such a lovely dinner with your neighbors, too! I did expect to see pictures of the finished product, though. I've heard it's delicious but for decades, I didn't buy beef. Even now rarely do. To raise your own though, no doubt you enjoy better quality & flavor by slaughtering your own calf. There is grass fed beef in the stores now, though a bit pricey for some.
Oh thank you for this lovely video! Our 26th (26 years already...HOW did that happen so quickly? ❤️) Anniversary is Thursday. and my husband loves bolognese...we just haven't found the right recipe to wow us...I'm looking forward to making this.

The Bolognese sounds delicious! I'm going to give it a try. I learned to make cream puffs in 7th grade home ec. My mother always made them and I continue to make them. They are a family favorite.

Making this recipe again for company driving in this evening. Free’s me up to keep fluffing pillows and making ready for company. The other low, slow let it go meal I make is Osso Buco but that is a little more work than this wonderful recipe. Give this a try, it freezes beautifully too!
I do the same thing whenever possible...get some soup or sauce cooking low & slow, or maybe some ribs or brisket in the smoker. Then I'm outside all afternoon playing in the dirt or in the shop until it's time to assemble dinner. This all depends upon our finicky PNW weather of course.
