Traditional Cretan Kokkinisto zygouri - Παραδοσιακό Κρητικό κοκκινιστό ζυγούρι

  • The opportunity to have a delicious cooked meal from freshly slaughtered meat presented itself few times a year and always made a nice story to remember.....
    When I was a child and I was vacationing in Mesa Mylopotamos by my grandmother's, a tiny Cretan woman who let you approach her very easily but on the other hand she had a characteristic austerity about how things should be done.
    While there, one of my favorite pastimes was to watch her cook in the hope that she would ask me to help her, which I did with great pleasure.
    My grandmother Chryssi lived with her two children who were cattle breeders and owned goats and sheep. Of course, they had a few of all the animals, except cattle.
    So, one day during my vacation a visitor from a neighbouring family asked if my uncle had a goat to slaughter but he only wanted half of it.
    So my uncle took the opportunity and said to my grandmother:
    "Mom, I'm going to slaughter the ........ goat to sell half to the neighbor's cousin. So, tonight make sure to cook some from the other half to eat and drink with some wine and the rest I will give to your daughter when she comes to pick up Dimitris.
    By the afternoon, he cαme holding the slaughtered animal and he gave a piece to my grandmother, he prepared half of it and took it to the neighbor's and he put the rest of it in the fridge as a gift to my mother!
    So, my grandmother took the meat and together with me she went down to the kitchen and started cutting it into pieces.
    I took the crockpot at her urging and went to fill it with water.
    I put it on the fire and went outside to find small wood that could fit under the crockpot.
    After she put the hogget (one year old goat) in the crockpot, my grandmother told me: let's go and collect the rest of the ingredients as the goat needs at least 2 hours to be cooked.
    So, we went to the garden and she picked tomatoes and when she came back she took from the pantry some dried onions and some parsley and mint.
    Then, she started peeling potatoes to make french fries.
    That's the recipe I followed today and it was as successful as it was back then!

    Το ζυγούρι είναι μια εξαιρετική επιλογή κρέατος αλλά πιστεύω ότι αυτή η συνταγή το αδικεί. Ίσως η κακή ποιότητα της ντομάτας ίσως τα πολλά υγρά που έμειναν στο τέλος δεν έκαναν το σωστά μελωμένο κοκκινιστό.
