  • Sarah and I made some keto-friendly pierogies!
    We tried a savory one "faux potato with cheese" which is made with roasted cauliflower of course! We also tried to make a sweet one, and well,....yeah it was funny.

    If I could suggest?, I find cutting the parchment into 6 pieces helps, that way you can use the paper to help fold the cheese over. 🤗🤗🤗

    The faux potato one would be amazing with cheddar instead of mozzarella - the cheddar Pierogies were always my fave!!

    One of my favorite fillings is Farmer cheese with an egg and some dill. It's more of a Slovak version and very delicious!

    Oh my was this every yummy! Great idea ladies!
    I used what I had on hand, roasted riced cauliflower, roasted garlic cream cheese, old cheddar, and diced hot pepperoni. I even tried one slice of havarti since I only had 3 provolone left..so good!
    I cant wait to do it as ravioli!

    The traditional way that my family makes the farmer's cheese perogies is with cinnamon , sugar and egg. They are my favorite perogi.

    I love that you gals are always looking at keto hacks. When I started keto years ago there wasn't as much creativity but I was always excited when I took other food items and ketofied them to fit my diet or macros.     We (Eastern Euro Jews) use Farmer Cheese
    (like a very dry ricotta) mixed with cream cheese to fill blintzes. Blintzes (crepes) use very little flour. If you can devise a keto crepe the world will be your oyster. The blintzes are typically fried in butter and can be served with a variety of condiments.

    I married into a Polish/Ukranian family, and my family parents were German/Romanian. Perogies are a must! I have not eaten them, either for so long. My sister in law is a Perogie Queen and actually makes them in her home kitchen and sells them like crazy. She has so many, many filling combinations one of her most popular are her blueberry perogies. They sell like crazy. I myself, lean toward the savory. Thank you for this video...one suggestion would be to add sharp cheddar rather than mozzarella as it is usually cheddar and potato that are the most common Perogie. Hahaha, I am Canadian as well and have actually grown up with these. Look forward to trying, perhaps a turnip mash would work as well.

    Farmer cheese pierogies were always one of my favorites. My mother in law made the best! I will have to try these and maybe tweak the recipe. Plum filled pirogies were also wonderful.

    Farmer Cheese Pierogies are AMAZING, butter melted over the top and I used to put honey on it.. I grew up on this.. I am going to try the cheese “dough”

    Regular pierogi with farmers cheese are usually sweet. Technically the cheese is mixed with one egg yolk (for binding) and sugar. This is how I’ve always made them in the past. Another one is with blueberries and you use a sour cream and sugar topping. Delicious. I’m sure the sweeteners would work just as well. I’m up for trying this. Looks delish! TFS

    Have either of you ever cooked with Kohlrabi..? I use it as a potato substitute and love it. I even add it to Chaffles and make Chaffle fries with it. This might be an option for several of your cooking recipes. Nice work you two, keep up all the good work.!

      @@catrionaanne4262 I use the basic Chaffle ingredients but add in some finely diced or grated kohlrabi. I do like to boil it first until it starts to get a little tender. Then I cook them in the dash for about 7 minutes. Slice them in a French fry shape and enjoy. You’ll have to play around with the amount of kohlrabi you add, I use about 1 whole small kohlrabi per Chaffle mix.

      Steve from serious keto put kohlrabi head to head with other veggies and said the kohlrabi was best by far. Unfortunately I have never seen it in small town Canada.

    I remember helping make Pierogies as a kid, it took hours because we made a huge batch, my aunt and all my cousins would help, oh they were so worth it. My Mom usually used Farmer cheese, or cottage cheese, grated onion in the filling, and of course potato. Thank you ladies for this hack I also haven’t had a pierogi in years. Don’t give up on farmer cheese try it as a savory version next time.

      Yes, I agree, Lorraine. My mother and grandmother made savory farmer cheese filled pierogi, as well. They mixed egg yolk in a large batch of the cheese seasoned w/ salt and pepper and the grated onion for the filling. As another commenter noted, the traditional dough wrapped pierogi were often first boiled in water, drained and then sauteed in butter to which chopped or sliced onion could be added to carmelize as the outside of the pierogi dough browned slightly.
      When using the provolone (or alternative sliced cheese) for the keto outer wrap, the egg yolk and grated onion in the farmer cheese filling would not be cooked as that combination used in the dough wrapper was, so I either carmelize the grated onion before adding it to the farmer cheese filling or use a dash of onion or garlic powder stirred into the farmer cheese to enhance the savoriness of the filling for the keto friendly version.

    For the cut strawberries, a suggestion is to add a little granulated sugar of your choice. Let stand a little while. It creates an amazing strawberry sweet sauce! Wonderful!

    I love pierogies! In Ukraine, we call them varenyky. I have been following a low-carb lifestyle for years and have never tried to substitute them. But when I visit my grandma, I set aside my diet and enjoy tasty but carb-rich food because I haven't found any low-carb or regular tasty varenyky in stores. Even when I try to make them myself, they don't turn out as delicious.

    The filling in the second one brings me back to the Atkins days when we all ate “ricotta creme” for dessert lol , it’s the same just ricotta, vanilla, and sweetener. Tasty. Back in those days there was virtually NO dessert options or keto dessert recipes.

    Sweet cheese is my all time favorite pierogi, never had it with vanilla though, we make it with an egg and sugar. I also really like blueberry filled.

    I love pierogis. Polish gal here. Love Farmer's Cheese, it has a ricotta consistency so you can use ricotta or cottage cheese if you want. Sweet Farmer's cheese is great, you can add some Lily's chocolate chips to it to make a chocolate farmer's cheese ( don't knock it until you try it). I may try Chris from Nashville's mock mashed potatoes. I just can't stomach cauliflower in my pierogi.

    I'm Czech and we eat fruit-filled dumplings. It's just fruit (usually berries or apricots) on its own inside the (boiled or steamed) dumplings, then sprinkled with powdered sugar, cottage cheese, poppy seeds, more fruit, etc. I'm eager to try this as a starting off point for a keto version of my childhood favourite. I feel like the provolone may work very well for this with some strawberries and a dusting of Swerve. I am just restarting keto after a two year hiatus (new baby) so I NEED videos like this to get me back on track.

    Ladies! I used to love potato pierogies. But i do not like them fried Sam i am. 🤦‍♂️ I like how you actually take real bites when you are taste testing. Some people will take a sliver, bring it to their mouth with their other hand under it, then cover their mouth so you can' t see them chew. Huh? What is that? I laugh cause it's weird. You Ladies get in there, smell it, if you don't gag you eat it. Outstanding! ...................................... 😎👍👍

    Farmer's cheese isn't sweet! It's properly supposed to be sour, almost like pucker-your-mouth sour. My grandmother made varenyky (Ukrainian word for pierogies) with farmer's cheese and also with mashed potato & onion. One thing I have missed on keto is those varenyky. I'm tempted to try this, but I really don't like the taste of provolone, so I'm not sure it'll work for me.
    (I did eat a few varenyky at Thanksgiving, as Thanksgiving and Christmas are really the only times we make them anymore now that my grandmother's gone. It was totally worth it - and I'm still losing weight, so no harm done I think.)

    I made them several months ago but used a fathead dough and turned out great. This hack seems a bit quicker and easier to get a thin “dough”. I shall give it a try!

    I need to try this hack with some eggroll filling! That sounds so good! And I was wondering if you ladies tried the fat head dough stuffed bagel bites yet? I think stuffing those with sweeter filling would taste way better!

    I use the farmers cheese mixed with Good Good jam any flavor... yummy or just add a little flavored torani sweetener to cheese any flavor you like. My husband was polish too.

    Wine and cheese. I've been using provolone as bread and putting skinny girl jelly on it. I really like it. Grape jelly on cheese wine and cheese they go together.

    Hello from Texas! I am going to try the savory one and maybe even a ground beef, cheese and marinara filling tonight. If I ever make the sweet one, I will try it with sweetened cream cheese mixed with minced strawberries and topping with a strawberry reduction. It will taste more like cheesecake to me I think.

    Thank you for sharing this perogie recipe! I sautéed up some onions to put in top, and filled the provolone with some left over mashed “potatoes” (i breathe im hungry bacon & smoked gouda mashed cauliflower) from Christmas.
    It was kind of a (delicious tho) fail? The mashed cauliflower filling was firm, but probably still too soft. It all baked up well but then I got greedy and wanted them browned, like I used to do with the Ms. T’s. Glad I only tested one bc the provolone turned into cheesy goo when I put it in the cast iron. I probably should’ve let them cool first. 😜 They were still amazing!!! Thanks again! ❤️❤️❤️

    This looks great! I am going to try it this weekend. The sweet one seemed like it would taste like a cannoli. So I may try to cook the cheese real crispy and roll it into a tube, like a Florentine and fill it with cannoli filling

    I had fun rocking your merch today. I can’t say I have ever had a perogi. The use of the cheese in that fashion seems interesting every time you do it. Totally agree about cooking cauliflower almost to the point of excess. Getting as much of the water out helps a ton with the flavor in my opinion.

    I wonder if you used a low carb tortilla for the sweet one ? Fill it with the sweet cheese and fry it in butter and roll it in sugar and cinnamon. Top w/ whipped cream and strawberries 👍🏼😊

    I melt cheese on parchment in the shape of a rectangle and use it for wraps. never thought of pierogi 🤔🤔🤔

    I'll be trying the savory fauz potato one. thanks for this recipe. I wonder if I could fill this with ground beef and cabbage , then chinese mustard and soy sauce to dip it in . I'll let ya'll know if it turns out ok.

    *I wonder if havarti would be a good choice for making these~ since it's also a mild flavored cheese, yet stays a bit softer on the cool down. I used to eat it w/apples or pears when I wasn't in the mood for sharp cheddar.     You could probably use this hack to make pot stickers. The 2nd one seemed similar to a blintz, never been a fav of mine non-keto. It’s a crepe wrapper with a sweet farmer cheese filling.
