I used to visit Türkiye a lot to climb & visit archaeological sights. One of the things I always loved was that places to eat were always happy to invite you into their kitchen to see how things were done & how clean it was. After a couple of weeks in the Köroğlu Mountains we were in Ankara for a little rest & a couple of us went looking for something to eat. It was a still night, & we'd wandered, but no restaurant was taking our fancy. Then this tantalising scent wafted from a tiny old narrow ally. We ventured down & found an old man. He was tending a push along cart with a charcoal brazier built in. He didn't speak much English, & our Turkish was still spotty. But between a bit of Turkish, English & German we ascertained he only did one dish - a type of chicken kebab. We ordered two & chatted while he grilled the meat & cut it on a wooden block that was so dished from years of chopping that it looked like a U-shaped glacial valley. He wrapped the meat in beautiful bread with a few simple condiments & then rolled it in paper. We found a place to sit, under clear skies, still & warm air in this beautiful city that has been inhabited since the stone age. It was the best tasting chicken I've ever had. Simply spiced, moist, all wrapped up in bread that was as soft as silk sheets. We didn't speak while we ate - we didn't need too. That happy moment sticks in my head decades later, & I'll never be able to recreate that simple charcoal cooked meal. But I'm happy with that, some moments should be preserved in the amber of memory, to be looked at & cherished. 🥙

Hi Alex, I know it's a longshot for you to see this but just in case, I'd like to share with you (and everyone) that it is possible to get döner close to the level of Turkey in France. You would just need to travel to Strasbourg ! When i first moved here from İstanbul i was sure i could never eat döner here, but then I came across a shop called Kebs Baba, which is a local döner restaurant run by second generation turkish migrants. Their meat's quality and marinade is truly the closest I had to Turkish ones all over europe (so far) and they also give you the twist of "Berlin style sandwiches" if you want, with so many options. If you ever have the chance to come to this part of France, you should definitely give it a try.
@@ecenbt Of course, finding the same quality and the same material is not an easy task. For example, I couldn't find the lettuce I wanted even in my own country.
Here's another fun etymology bite - döner is actually short for döner kebap (rotating kebab), from the Turkish verb dönmek (to turn/rotate). Combined with yaprak, it literally means "rotating layers." And while we're on a roll with rotating meat linguistics - the word "shawarma" (شاورما) comes from Turkish çevirme, meaning "turning" (from çevirmek - to turn/rotate). So whether you're getting döner kebap, shawarma, or Greek gyros (meaning "turn/spin"), you're essentially ordering some variation of "that spinning meat thing!" 😄
When I go to this place, I never eat onions because it distracts from doner's taste, just meat and bread. Also there is a lavash at the bottom of doner pile, soaked in fat, that is a treasure. It is a rich dish, acidity is needed, you can have it from sour and salty ayran, that is the purpose of it, primes your taste buds for the next round.
I’m getting older and really appreciate onion more and more. It helps digesting 😅 also with a lot of meat and bread dishes I only use onion as garnish. When I was younger I always loved almost a salad with my meat and bead 😂
We try to prepare it as simply as possible. It is the most ideal - adequate and simply prepared version with meat - tomato - onion - salt and spices. So you can enjoy everything in it equally in every bite. In Europe they add a lot of greens and sauce. This is no different than eating salad and bread, because the most of what is in it will also be in the bite. So they can't taste the meat and there is no point in eating meat. Also, this is definitely not done in Turkey, but it helps those who try to cover up meat that is not fresh in Europe with sauce. The meat will shine as if it were fresh with plenty of sauce on it. In addition, although onions take a long time to digest, they are extremely beneficial for health. It has many benefits such as opening the mind, preventing Alzheimer's and fighting cancer cells. It is important for older people to consume more than one but sufficient amount during the day.

There is nothing like Doner in Istanbul. It’s the only place I’ve ever seen the meat cooked with wood or coals and it’s beautiful and tasty. What you get in other countries is just nothing like what they serve in Turkey and having lived there for a couple of years and tried very many places, the Doner is one of the things that I miss the most. Yum Yum. That said, I hope you also tried the pide!
You should try eating a doner in Ankara. Cici Piknik, Pecenek Doner, Karagedik Lokantasi, Meydan 1957. Average doner quality is far superior than Istanbul.
They do have charcoal cooked tacos al pastor in Mexico City as well. The meat is haram pork because the immigrants were Lebanese Christians but they are indeed using charcoal at the very best ones instead of NG or LPG.
You have a good friend @alex. Döner is a very personal choice and in my mind Tatar Salim is clearly one of the best. There are few others in the same league but nuances are usually rather minimal or personal. You are lucky to have him as a friend.
I feel like the amount and style of the ads got to a point of heavily disrupting the videos and making them hard to watch. Which is really unfortunate, because I am super excited about this series. I counted 2min of Better Help, 2min of Pans and 10s about a UA-cam channel... and one must also count the 20s of Patreons at the end. That is 4:30min of a 15:15min video. And they are not really integrated into the video at all, so they take me fully out of it and destroy the flow of the video. I know that stuff costs money, so I can understand if cutting back on the amount of ads would be hard. My suggestion would be to at least put the pan-ad to the end of the video. The people who would actually consider buying them watch your videos completely anyways and you only have one interruption left in your actual video. Also I miss the bar on the bottom of the ads.
I regret having bought your cookbook knowing that you still take betterhelp sponsorships while knowing about all the evil they are doing. It's shameful

Alex: "Wow WoW WOW!"
That is called “MrBeastification” where UA-camrs overreact to everything they encounter in a video or youngins get bored (who can be expected to watch a video more than 20 seconds?!!)
Then again the quality of the fresh fruit & veg in Türkiye was pretty spectacular when I used to go there. The scent, colour & flavour of the tomatoes alone heady.
@@Getpojke Coming from where?
Alex world traveling chef. I love that you’re back. Love your dedication to the art
I was always asking for the "Berlin" style of Kebab without the Dressing and now I have learned that it's the more authentic experience actually.
Who would have know :)
Hey Alex! So happy to see you back with a new series! 😊 These past few months have been tough, but your ramen series from 7 years ago kept me going i even built my own ramen noodle machine! 😄
I’ve never tried kebab before, but it looks a lot like tacos de trompo ( not tacos al pastor) from my hometown in northeast México. You have to try them someday! 🌮🔥
Did you AI-thumbnailed yourself?
yeah its pretty lame
Finally someone notices that monstrosity instead of just commenting about betterhelp!
About AI, the dubs in italian and french are disgusting
he did and its so sad.
I have uploaded my consciousness to UA-cam.
The quality of the new camera rig and editing is fab! Great effort Alex and team!
If Alex is not having a Döner Kebap in Germany, it will not be a completed series.
Gemüse🤢
Well after eating Döner Kebab in its origin nobody would eat the cheap copy adapted to local people. Sorry guys.
Berlin Döner is pretty awful in my experience. Very cheap ground meat in the skewers, not even legally allowed to call itself kebab iirc
@@Houfaaa You can't judge the food in an entire region based on a very small experience. Ala Turka in Stuttgart is very good. And my local in Nufringen was good, too.
That must be the reason why All the turkish immigrants, who go for holiday to Turkiye, eat the rest of the year german Döner 🤦♂️😂😂
Sorry, but you really have no clue what your talking about 😉
AAAANNNDDDD.........it seems the passion is BACK! Good to have you back, Alex! Salut!
Oh, also Andy Cooks here in Oz plugged the saucepans just after you went on hiatus, and I made a sad post. I recently made a happy post, so hopefully you sell out again!
What happened to the new video? Got a notification, but when i opened it, it said private video?
Cooking Flatbread on the walls of the firepit? I love it! This authentic cooking is great Alex!
Emir did not need to go so hard with the French accent at the end xD Banger video as always
Seeing You with a smile on your face as You try new food is always a great! 😊😊😊😊
Bro got approached by illuminati for revealing the secret kebab recipe and took the video down 😂
Incredible video, Alex! Thanks for taking us on this journey into my favorite food!
Truly a great video and a return to form for you! Again I'm sorry if I've left some less positive remarks in the past videos, it's so nice having you back.
There is so much to eat and explore in Turkey. Glad you enjoyed it.
Somewhere along the line you have to go to Greece and compare it to the gyro and also do a segment on kebab
Thank you Alex. Very happy to have you back! I was used to your saturday schedule, surprised when you showed up today :)
Thanks for your usual great video.
Next time go to Mexico and apologize for French Taco, please.
So glad you are back! And working on topics right up my alley! 👏
I regret having bought your cookbook knowing that you still take betterhelp sponsorships while knowing about all the evil they are doing. It's shameful
A great episode, thanks
Welcome back. You have Britain's permission to do fish and chips if you ever wanted to
🤜🤛
Love this series! Would love to see you doing more middle eastern foods - felafels, turkish breads, etc.
Such a good video, turkiye seems like such a cool place to visit. I was really disappointed to see a BetterHelp sponsorship though, they're well known at this point for taking advantage of people who are already vulnerable in the first place
Nobody cares. Unless you're on Patreon or gifting, stfu
15 minutes just gone like that. Thanks for this amazing video Alex!
I love les Kebab de Donateur (cf la piste audio française).
showing my ignorance here, but i never realised there was so much prep inthe humble kebab - massive prep, amazing; defo deserves an amazing surround, with great veg, great sauce
Can you please not do video title translation?
That's youtube doing it automatically. Just turn it off.
@nihlify How can I turn it off? Also, I'm pretty sure, the creator has to enable video title translation first.
I've turned it off but it still does it
The translation is absolutely horrible. The sound is muffled and the voices without emotions.
Juste impossible to watch from France, the automatic voice translation is so bad. Grrrr
Good to see you back Chef Salut!
I was getting afraid this was becoming more AD than video.
Sponsorblock makes it bearable
@@jongmassey If you need a break from the video to watch it. Watch something else ?
@@andrewwatts1997 what on earth are you on about?
@@jongmassey Forgetting your own words so soon ? If, you, need, an, ad, to, endure, a, video, Watch, another, video.
@andrewwatts1997 in your persistent desire to spout incomprehensible gibberish you appear to have got your reasoning arse about face
I figured ud had some problems with making videos, but BOIIII was i happy when i saw u posting again... hope everything wirks out for u my guy
Greetings from germany
what we usually eat is the cheap knock-off of a cheap knock-off of a cheap knock-off. The original is a different animal. Even literally. 99.99% of the kebaps you get in western europe are chicken, beef or mistery meat.
Welcome back! We need an induction friendly beauty of the sauce pan too!
PLEASE remove the option to auto translate....
I as a visitant can't deactivate this hell of AI generated translated audio track on android
Please someone stop UA-cam doing this...
Already changed OS idiom and UA-cam and Google account and still auto dubs video
IT'S SO SAD (ALSO ALEX DOES ALOT ERRORS SPEAKING PORTUGUESE VIA AI GENERATED TRANSLATION, also I am Portuguese and this is translating to Brazilian... It's even insulting ) at least use same continent dialect ffs
Second this! Never had this issue before and it sucks. Immensely!
I hate this auto translated shit so much
Why not use other track?
They can't do anything, it's a standard feature that is been rolled out to all videos.
It's you the user that need to deactivate it, just like with the ads and sponsors.
Lol o tuga não aceitou ainda que depois do século xix não existe mais relevância portuguesa
Awesome! I am excited to receive the new sauce pans. Thank you Alex and Soy.
I use the higher end All-Clad pans, which work very well. But I can't wait to try what Soy creates. They are gorgeous. It's hard to get anything in the U.S. that's hand made by expert craft persons.
Now would love a Salut quality kebab cooker. 😀
1:43 .. My man you showed us the wrong location you visited. You went to see Tatar Salim in Kucukbakkalkoy and not the one in the video which is in Kadikoy.
I think they went to the first place to be able to go into the kitchen, but then went to Kadıköy to eat, as it's a more central place and possibly closer to the storage they visited
Alex, great to see you back, and hope all’s well.
Please, please, please can you do a follow-up to your Pizza al Taglia video; I’d love to see your version. 😉
what happened at 14:46 ? Shady guy approaches and then the video cuts 😮
Salut Alex, thanks to your Videos and my Daughter i am now learning French, Merci et bonne Journee
Adding to the chorus: Alex, the world is happy you are back!
Love having you back ❤️
The best turkish authentic kebap dish in many peoples opinion is called "Iskender Kebap". Its my absolute favourite thing in the world. If you dont get the chance to eat it in Istanbul, maybe try it in Berlin (if thats a stop on your list)!
If you want true İskender kebab please visit Bursa. Go to the original birth place of the dish.
Salut Alex! That Doner looked absolutely delicious 😋😋😋 Flying to Istanbul shows real dedication! Thanks for sharing! 🙂😎❤
par défaut, youtube france lance la version doublée "française"
ouch le choc, ça passe pas :o(
J'allais me casser de la vidéo à cause de ca, je pensais que c'était la piste son originale de la vidéo, quel enfer
Oui la meme horrible...
Same here just in german... how do I turn this off? I miss the thicc french accent...

YOU'RE BACK! awesome. I heard rumors you had retired. So glad to see you are still sharing your enthusiasm for food.
What happened to today’s video? Don’t see it anymore.
2:45 he is saying 'you can cut this part out' lmao
Great to have you back on UA-cam, but please stay away from BetterHelp!
Tatar Salim is such a unique pick, it's one of the GOATs. also hope you tried the Sutlac (Rice pudding). still dreaming it, been 5 years
A way better Doner party than we had in the U.S.
😂😂😂

Ah ouiiiiiii! Alex you're so back! Missed the videos. I'm celebrating with a bowl of Ramen today :)
